When my brother first came to NCSU my mom bought a case of spam and put it in the cupboard. They had expiration dates in 2003. I ate every one of them. Finished them last year.
Spam is disgusting, but it was free food and I wasn't working for most of that time. 11/9/2007 9:01:27 AM |

The funny thing is I have only owned this townhouse since mid 2005 so that can would have to be from like 1 or 2 owners back. It was in one of those corner cabinets pushed way back where you would not find it without reaching around in there. 11/9/2007 9:02:55 AM |

From harrison's internal med:
Quote : | "Spores are highly resistant to heat but can be inactivated by exposure to high temperature (116–121°C) and pressure, as in steam sterilizers or pressure cookers used in accordance with the manufacturer's instructions. Toxin is heat-labile and can be inactivated by exposure to a temperature of 85°C for 5 min." |

Quote : | "Botulism (Latin, botulus, "sausage") is a rare, but serious paralytic illness caused by a nerve toxin, botulin, that is produced by the bacterium Clostridium botulinum. Botulinic toxin is one of the most powerful known toxins: about one microgram is lethal to humans. It acts by blocking nerve function and leads to respiratory and musculoskeletal paralysis.
There are three main kinds of botulism:
* Foodborne botulism is caused by eating foods that contain the botulinum toxin. * Infant botulism is caused by consuming the spores of the botulinum bacteria, which then grow in the intestines and release toxin. * Wound botulism is caused by toxin produced from a wound infected with Clostridium botulinum. This is the rarest type of botulism.
All forms of botulism can be fatal and are considered medical emergencies. Foodborne botulism can be especially dangerous as a public health problem because many people can be poisoned from a single contaminated food source.
In the United States an average of 110 cases of botulism are reported each year. Of these, approximately 25% are foodborne, 72% are infant botulism, and 3% are wound botulism. Outbreaks of foodborne botulism involving two or more persons occur during most years and usually are caused by eating contaminated home-canned foods. The number of cases of foodborne and infant botulism has changed little in recent years, but wound botulism has increased because of the use of black tar heroin, especially in California.[1] In July 2007, a widespread recall was initiated due to botulism contamination of food manufactured by Castleberry's Food Company.[2] Shortly after in August 2007, the FDA issued a warning of botulism risk from canned French cut green beans manufactured by Lakeside Foods Inc, of Manitowoc, Wisconsin.[3]" |

Botulism is an anaerobic bacteria, meaning they can live without air, so once you open the can the bacteria can become airborne and infect you even if you don't eat the contents.

The bacteria Clostridium Botulinium can live inside the can without access to air. Most bacteria would die and be unable to reproduce in an anaerobic environment....The botulinium bacteria can reproduce in the can and create toxins which are what is harmful. The reason the can is bulging is because they create a by-product of carbon dioxide inside the can. Once the can is opened, the bacteria is released into the air and can enter your body via your eyes, nose, mouth and infect you even if you do not ingest the contaminated food.11/9/2007 11:31:17 PM |
