I figured out the thing about olive garden thats special.

The cheese they use costs 13 dollars per stick in the grocery store which is probably why mom and pop restaurants don't use it. That cheese is bliss to me and og is the only practicaly priced place in the us that offers it.

There are better italian joints but they are all VERY expensive and i've only found one in miami beach one in philly, some in little italy and 3 in la. None in the triangle. None in memphis.

ya I have a friend that hates cheese and a friend just like me that rarely goes. When I go with the cheese friend we get the waiter to fill a bowl with cheese ahead of time so she doesn't have to go back and get more sticks while grating.
