anybody go the heavy cream route for butter cream icing as opposed to shortening? I tried it once and the icing tasted great but melted a bit at room temperature

Shortening is what they use to make most grocery store icing.

the buttercream recipes i've seen have all been just butter confectioners sugar and whatever flavor i put in. give me some of these other recipes to try!!

also, wolfpackgrrr those look AMAZING! do you have a link to the recipe or did you make it up yourself?

Haha I have to admit I forgot about the potluck until this morning so bought the organic vanilla cake mix at Harris Teeter and added a teaspoon of cinnamon and one diced granny smith apple to it. The mix was surprisingly good and didn't have that funky artificial taste some mixes have. I think if I use it again I would add a half cup of mayo to make it more moist. The icing is the one I posted two pages back but I only did 3/4 cup sugar and then added caramel sauce while beating to taste. It was probably a half cup of sauce by the time I was done.

I'm going to make chocolate chip cookies from scratch for letter c week at school, and I'll probably make cupcakes too. i'm thinking i'll probably make box mix for the kiddies. they'll never know the difference.

Hell yeah, mayo is the secret ingredient of lots of southern cakes. Do a google search and you'll find a bajillion recipes for mayo cake.

So I believe I'm going to make an apple cinnamon cupcake from this recipe

wow, that's shockingly open-minded for someone who gets off on mocking others. not only did you pass the golden chance to bully wolfpackgrrr for using fucking MAYO in a cake/dessert, you actually are going to look into it!!!11

[@wolfpackgrrr: yes, i know about mayo in cakes; never done it, but yes i do know about it ;-). those apple ones look as if they could be in a gourmet/expensive dessert place!]

for the cupcake making experts: anybody made cupcakes using wholewheat flour or a wholewheat and white flour mix with good results (i.e., moist).

I usually make my cupcakes with whole wheat flour or a mix of white and wheat. I find that if I add some applesauce or extra fruit (if I'm making a fruity cupcake) then it normally balances out. I also like to add Greek yogurt to my cupcakes too. Have you tried using yogurt or apple sauce?

Slow your roll, dude. One of my favorite desserts (grandmas recipe for fruit salad) has mayo. You're just a prick, hence why I enjoy mocking you. Don't screw up our cupcake thread kthx.


As for whole wheat flour, yes, I have used it often in sweets. I've never noticed them being dryer but I also rarely follow a recipe to the exact measurement and just go on looks and tastes to decide whether or not it's ready to be baked.

.I usually use whole wheat. Applesauce is a good way to keep them most or mayo But to be honest I've never seen a huge difference when adding nothing extra.

caramel buttercream! this stand mixer makes buttercream so easy. And it's so easy to personalize with different flavors. I think it is my favorite part of making cupcakes. Only problem is this is borrowed I will eventually have to give it back

whole wheat flour needs more liquid to moisten it and maybe a little extra levener. sour cream is my extra-moist ingredient of choice. mayo sounds blegh

You can't taste the mayo in the final product and it doesn't really affect the crumb of the cake unlike a lot of other additives. I think that's why it's a popular choice.

i guess you would need to remove some of the butter from the recipe though, sounds oily otherwise

I've never had it turn out oily. The crumb is the same. Can't really speak for salty since I use low sodium mayonnaise.

Pumpkin spice cupcake SHOWDOWN! haha I'm in!

Pro tip: When making coffee-flavored cake or cookies those stupid Via things they sell at Starbucks are perfect for the job. Don't have to worry about subbing out any liquid and it tastes a lot better than instant coffee at the supermarket.

Ooooo, thanks for that. I was trying to think of a way where it wouldn't be too strong and where I didn't have to use like .. Folger's instant coffee. And I think ground espresso might be too harsh

Do those VIA things come in espresso packets, too? or just regular coffee?

They have a French roast which is going to give you the same depth of flavor as espresso.
