Mini layer cakes with raspberry jam and whipped cream (basically a mini cupcake)

I got the Kitchenaid attachment. It works fine but it's kind of messy to deal with. I'd probably get this one if I were to get a different one:

I went with just the blue moon for now. It needs a little tweaking but I think but they came out pretty well. Its not like eating a bottle of blue moon but leaves a slight aftertaste. I think next time I'll brush them with more beer after taking them out of the oven than I did this time.

Haven't branched out to cupcakes just yet, but the other night I came out of my baking depression... first successful dairy free baked good

Lemon Strawberry whoopie pies (I cut mine in half - sorry it looks not so pretty)




I brought them to the Vandy clinic and everyone loved them so now I feel confident enough to start baking again

I've successfully used coconut milk in place of dairy in cupcake recipes in moments of desperation when I realize halfway through a recipe I'm out of milk lol.

I found a dairy-free recipe - this recipe didn't have any milk, so really it was a matter of finding a butter replacement

That's why it has taken me so long.. I wanted to read reviews and have plenty of time to make (or remake something in case it sucked) a recipe and taste test like every step. The Earth Balance stuff is what I used... I can tell it's in there, but apparently no one else can so yay!

Ive been using Earth Balance for a while, the soy free one is much better than the original. I could definitely tell a difference at first, but now I prefer it to butter.

Kinda off-topic, but my roommate recently made some super-dank brownies. 4 layers: gooey fudge brownie top, chocolate chip cookie layer below that, oreo layer below that, then a normal brownie layer on the bottom. The only down-side is that as soon as I started eating a piece, I was instantly reminded I probably have a cavity I should get checked out.

After putting off trying to bake non-dairy stuff (except for one thing a few months ago), I tried it out yesterday

they turned out great



(Non-Dairy) Mojito Cupcakes

Spiced rum cake topped with a rum glaze, finished with fresh mint and lime frosting!

yeah it does resemble shaving cream I was pretty pissed because I wanted to use my jumbo star tip for the frosting but I couldn't find the little attachment for the jumbo tips so I had to use the small one

I'm definitely trying that recipe. I'll probably just use a swiss meringue buttercream or something for the frosting though. I like to avoid buying powdered sugar when I can lol.

Anyone have a good key lime cupcake recipe? The one posted a couple pages back uses cake mix and Jello. I'd rather just use stuff I already have in my pantry.

Also need ideas for a "yellow" cupcake as requested by my coworkers. I was thinking maybe a banana cupcake with white chocolate frosting or maybe mini pineapple upside down cakes.

key lime cupcakes:

do you remember those lemon cupcakes filled with lemon curd and blueberry icing a few pages back?
you should make something like that, just subbing lemon for lime. including the lemon curd.
KEY LIME CURD. with meringue on top like those smores cupcakes, or whipped cream.


my other idea is key lime mini cheesecakes.


I like this recipe, and I sub at least half the cookies/crackers for ground almonds for the base.
it works pretty well with all-nuts as well. all the sugars can be substituted with a little less than
half their measure in splenda, and light cream cheese and lowfat/fat free sour cream,
and they're still pretty damn good.
