Sweet bourbon salmon recipe
Ingredients for sweet bourbon marinade 2T fresh chopped chives. Some recipes call for this sprinkled on the cooked filets. I like it in the marinade. 1/2 cup pineapple juice 1 cup olive oil 2 T soy sauce 2 T brown sugar (xylitol works fine)
2 T bourbon
1/2 t course black pepper 1/4 t garlic powder (or a few cloves of fresh crushed garlic)
Instruction for grilling salmon Marinate your salmon for one to three hours. If you can take the skin off before marinating, that's great, but I don't worry about it. It will come off easily when it's grilled.
Preheat the grill to about 450. I also preheat a cast iron griddle or skillet on the top rack of the BBQ to use for serving the salmon.
Grill two to three minutes per side. Don't overdo it, and err on the shorter side if you are using the cast iron griddle or skillet for serving. It will tend to cook it a little extra, and you don't want the fish to be overcooked.
Enjoy! 11/3/2007 5:02:06 PM

5x^ it's usually canned salmon you use for that...
for a nice big fillet get a charcoal grille, a cedar plank just a little bigger than the piece of fish
marinate the fillet in a honey, balsamic vinegar, sea salt, and 1-2 themed spices for about 20 minutes, whilest you soak the cedar plank in water
fish on plank, plank on grille for about 10-20 (till done)

I hate farm-raised salmon...For those of you who don't know, they're colored because their diet is obviously poor in comparison with wild salmon and they don't naturally obtain that bright pinkish orange color. Farm-raised salmon are also carry higher rates of disease and overall poor health because of limited space to swim and inbreeding.
After that tangent, here's my recipe:
nice fillet of wild salmon marinade of your choice (I like teriyaki)
put just a little olive oil in a pan and heat dip salmon in marinade and poke repeatedly with fork place dipped salmon in hot oil grill until done to your taste enjoy! 11/3/2007 9:34:01 PM

Thai-style Salmon
Ingredients:
Salmon 1 cup Coconut Milk Fresh ginger, minced Fresh garlic, minced Fresh cilantro, chopped Green curry paste Cubed veggies, whatever you like. I usually use carrots, shiitake mushrooms, bamboo shoots, eggplant, bell peppers, etc. Just whatever's on sale or fresh at the Farmer's Market really.
Preheat oven to 350 degrees.
In a small bowl, whisk together coconut milk, ginger, garlic, cilantro, and green curry paste. All that stuff is to taste, so whatever tastes good to you.
Make a pouch out of tinfoil. Place your salmon in the middle of the pouch. Surround the salmon with veggies. Pour your curry sauce on top of the fish, but not drowning in it. Seal your tinfoil pouch.
Bake in the oven for about 20 minutes or so. Depends how big your fish is. Serve with jasmine rice. 11/4/2007 5:16:34 AM

Salmon is the most nutritious meat. But don't get farm-raised salmon. Contain horribly high amounts of anti-biotics, pesticides, colors, etc.
