So I'm having a fish fry at my place on the 4th and I need some good grilling recipes.

We're frying tilapia, but I also have some mahi and wahoo that I've caught the past few weekends deep sea fishing that I want to grill. Honestly, I've grilled mahi before after just marinating it in Italian dressing overnight and it was pretty damn good. But I want to try some more complicated stuff this time.

So if anyone has some favorite recipes, feel free to share.

People seemed to like http://allrecipes.com/Recipe/Ginger-Glazed-Mahi-Mahi/Detail.aspx when I made it before we had a grill. I haven't tried grilling it, but a lot of the people who reviewed it did and said it was good.

I usually do something cajun with my fish
whether use a creole seasoning on it or a blackening seasoning on it... I like it spicy and medium rare.

Sautee'd fish is pretty good too

But blackened mahi is and will remain my favorite.

^ you and i have opposite tastes i despise sweet meat.

About a month ago I prepared some king's we had caught off shore.

A) Lemon Garlic Olive Oil marinade
B) Lime Butter
C) Italian Dressing

Marinated all three batches for a few hours in the fridge, then wrapped in aluminum foil (with sauces) and grilled them (with foil still on, easier to flip) for about 7 mins a side. Delicious.

i don't eat fish, but my brother does (catches his own and grills it). he swears by ^^ that recipe

he puts a slice of lemon in w/ it too

Balsamic vinagerette salad dressing makes a good marinade too.
as does roasted redpepper italian.

Lime butter was pretty simple. Just heat some butter slowly and add lime juice. I imagine there are some herbs/spices which would accent it more, i will ponder on that. Once you heat it for a while you can turn it off and pour it over the pescado, then in the fridge it will harden/solidfy on and in the fish.

i like to make a lime marinade. i use the zest of 1 lime (the outside green part, you can use a cheese grater to remove it), about a cup of white wine, a couple of cloves of smashed garlic, 1/2-1 teaspoon salt, and a tablespoon or 2 of olive oil. i mix all this up in a ziplock bag and then let the fish soak in it overnight (the amounts i gave are enough for about 2-3 servings of fish). then grill it or whatever the next day. it's very delicious. also, i keep the lime and cut it up after the fish is cooked and i squeeze the juice over the top.

old bay, good seasons dressing,rice wine vinger with garlic herb,crusted in blk pepper is how i like to grill fish and top it with lil bit of lemon juice.

one of my favorite ways to cook tilapia include lemon peper and dill weed.. it's AWESOME

also, i second http://www.allrecipes.com they have some amazing recipes on there, and people leave comments and suggestions which are often times very helpful. i love that site!

I'd fry the mahi and I'd wrap the wahoo medallions in bacon and grill them, while frying the wahoo that I don't wrap in bacon


thats what I normally do with those two fish

all you need is a little bit of old bay or tony's creole and maybe a touch of garlic powder

I've seen them eat candybar wrappers, coke cans all kinds of shit... they're like 1 step up from barracuda.


P.S. I use tony's old bay and chef prudhome blackening seasoning on seafood... but old bay i only use on shell fish.

I never claimed kingfish was good

Spanish is much better, hell bluefish taste even better to me than kings

plus I don't stick a gaff in a king anymore unless it's going to weigh in

I believe I asked a question I have no problem eating tilapia, in fact I rather enjoy it and its nice and cheap. Then again I really like me some mountain trout too and a lot of people look down on that.

The best kings I have tasted were smaller (like 24-28 inches). Perhaps it is less mercury or just the younger fish taste fresher.

yeah a 20lb+ king is pretty nasty imo

we served it every now and then at outback, and some guy called it a "dirty mexican fish" haha

i've only ever had it from outback and when i cooked it, and i've loved it everytime. to each his own i guess.

Thats why we're frying the Tilapia. We got about 30-40 people coming. I've got enough mahi and wahoo to feed about 10-12...so I'm grilling that and frying the cheap stuff.

Last fish fry we had, the tilapia was great. I could care less...we're all gonna be pretty shitfaced by the time dinner rolls around anyways.

I just got back from the Outer Banks and all I wanted to do out there was have a nice piece of rare tuna...both places fucked it up and overcooked my fish. Just have to do it yourself I guess, but I'm not a fan of grocery store tuna because of all the gassing it receives.

I had tilapia for the first time a couple months ago, it was actually very tasty. Much more so than I expected. Would most assuredly eat again.

Mahi? My favorite way to grill them is to fillet, lightly marinate in soy sauce for a couple hours, then grill. Of course it helps if they've only been out of the ocean for a couple hours. I've done the same thing with tuna (cutting it into steaks instead of fillets) and it's damn good too.

I've wrapped Wahoo in bacon and grilled it before just as colter described and that works well also.

In my esteemed opinion, the best way to eat a King is as fried nuggets.

I went to a restaurant on the coast the other night where the special was Grilled Amberjack. My exact words were, "I didnt think you ate amberjack?" Anyone had it?

honestly id just girll it with some basic seasonings maybe the italian marinade and then have different toppings for it, like an olive tapenade, a spicy mango salsa, maybe a crab meat and hollandaise topper that way people have options or can just have it plain.

This worked out great. Got some rave reviews.

The party overall was a huge success. We scrapped the frying part...just grilled fish and burgers and got some fried chicken from a local BBQ place. People brought sides and deserts. Went better than expected.

^^^^ amberjack? Yeah, I've heard of people eating it. You have to cut out the parasites first though. They're usually chocked full of them. I watched a guy filet one a few weeks ago and he was pulling out worms the size of spaghetti noodles. After seeing that, I think I'll pass.

smoked salmon on the grill is great...

1. go buy a strip salmon cut, cedar plank(s) (from bbq galore in cary - one per salmon cut)
2. soak the cedar plank(s) in water for 2-3 hours
3. put some olive oil, italian breadcrumbs and basil in a bowl and mix/grind them together
4. apply thin layer of the mixture to the salmon
5. put the salmon on the cedar and place the wood directly on the grill

it helps to have a squit bottle with water nearby to keep the plank moist and to douse it if any small flames start on the planks. salmon is done when the edges are slightly crisply and flaky.

Atlantic Coast jacks tend to have worms, while our redfish do not have any and are good to go for eating

gulf coast jacks are parasite free, but the reds on the gulf coast are full of parasites, kinda strange how that works but thats whats up... sucks cause the gulf is loaded with reds too


and oh yeah, had some tasty fresh grouper yesterday for dinner that we caught over the holiday weekend

ps... I freakin hate reef donkeys
