I learned how to become invisible while playing Oblivion. Seems pretty simple. First acquire 5 items. Perferably light items like rings, necklaces, wallet, shoes, etc. Then you will need 5 grand soul gems that are filled with souls. Don't worry about human souls. Cats and dogs are fine. Go to your nearest arcane university and place an item and a soul gem in the altar of enchantment. Enchant the item to 20% chameleon. Do this 4 more times and you are invisible.

In Fallout 3 it's a lot easier: Obtain a stealth boy. Activate stealth boy. Also, 100 sneak skill points help.
