eggplant parmesan

that's a pescatarian, not a vegetarian.

yeah you can do "oven-fried" eggplant really easily

take some mayo and whisk it together with some italian season, a little salt and pepper
brush it onto 1/2 inch think slices of eggplant and roll them in panko bread crumbs

back in the oven until crispy, turning once or twice

Yeah but no one ever uses pescatarian, it's just easier to say vegetarian.

Merriam Webster definition of pescatarian: A vegetarian whose diet includes fish.

I maintain that it's close enough, and thanks again for the suggestions.

whole foods has wild-caught sockeye salmon on sale for $11.99/lb...

caramelize that in a little oil to create a nice crust, cut up and oven-roast some root vegetables (carrots, parsnips, and golden beets all go really well with it), reduce some balsamic vinegar to drizzle over it... and you have a meal that is damn good.

and i don't even really like salmon.

if you just go to Trader Joe's you can buy a pre-marinated chunk of salmon for under $10

lightly oil a baking dish (something that holds heat, like glass or ceramic - not metal) and bake that thing for like 10-20 minutes

keep an eye on it so it doesn't dry out and pull it out a bit before it is finished cause it will keep cooking in the pan until you serve it

Yeah, i don't like salmon either.

Than again, that's what Whole Foods has on special, and i don't trust seafood from harris teeter/food lion/etc.

And this guy doesn't strike me as the kind that i can send to Earp's. (Plus i don't know what they even have right now)

I made sweet and sour tofu that was fabulous!!
I also make a tofu peanut butter red curry. Nummers!!

that's where i get almost all my recipes from.

i've made baked parmesan before, i actually prefer it that way... but i have a tendency to burn stuff on the stove.. i'm working on that.

Dude, if something with a beating heart/pulse had to die in order for you to eat it, don't call yourself a vegetarian.

I was a vegetarian for two years and the most common question I got was "Do you still eat chicken?". It was epic facepalm.

I'm not a vegetarian. I understand the differences in various diets.

Also, vegetarians are silly, but i still like cooking for them, because ideological difference don't play into why i cook.

There isn't one type of person, called a "vegetarian".
Vegetarianism is practiced by many different people, many different ways, for MANY different reasons. What you just did was generalize as though all vegetarians are the same, or became vegetarian for the same reason(s).
I was vegetarian for many years -- can you guess why?
(Hint: it had absolutely nothing to do with opposition to killing for food, animals rights, or avoiding fat/cholesterol etc.)
