what kind?

beef is still good even after it has turned a little brown, that even makes it better. Chicken and pork I dont know. Thorough cooking is a good thing if in doubt.

aged beef is good

when it is properly aged

aging != letting it sit in your fridge or out on the counter for a while

If you aren't going to eat it in within a couple days, put it in the freezer.

"What is also important to remember is that the process of dry-aging usually also promotes growth of certain fungal (mold) species on the external surface of the meat. This doesn't cause spoilage, but actually forms an external "crust" on the meat's surface, which is trimmed off when the meat is prepared for cooking."

I've always heard an aged steak tastes awesome, but the whole idea of a crusty slice of beef is

srsly

Once you freeze shit it takes mucho planning to cook it. My mom has like 50lb chunks of burger meet in her freezer and you would need a chainsaw to get them back in usable sizes.
