had beef carpaccio last night . . . never tried it before and was at a fancy restaurant the other night. i ate the whole dish w/out realizing it was "raw beef".

how the hell did you not realize it was raw beef?

if you didnt reliaze it wasn't raw it was either prepared terribly or drastically over sauced

i've had many different styles of raw beef in a few countries and never had a problem

yeah, they've probably already killed 100 people with that dish.


Raw beef is fine, as long as it's a quality piece of beef to begin with. Friendly advice, if the Carpaccio bothered you, avoid steak tartar.

beef is the same as fish. it's ok to eat raw as long as it has been handled properly and purchased from a reputable joint

this place was @ Eden Rock on South Beach ... i think it was Gia.


it was thinly sliced, so I realized it was cold . . . but it wasn't totally pink. i later realized it was raw beef. like i said I never had it before ....

it was brown ... and i think it was beef tenderloin, but smashed thin with a mallet or cut thin.

it's not going to hurt you just because it was raw

yeah...

you'd probably run more of a risk that something in the marinade would make you sick than the actual beef

as long as it is a fairly acidic marinade, like most, then you should be fine

usually when I make a steak I marinate it all day in garlic, worcestershire sauce, and a few other spices for about 8 hours. After that I basically just sear it on both sides for a minute each. Just enough to warm it up a bit

i'm going to amend my statement to only include "cuts" of beef


ground beef is a different story...

i know some people like it raw but you're much safer just cooking it a little more

yeah, fo sho. if you order a burger rare then you are just an idiot. because all the bacteria on the outside of the cut gets ground into the middle, so it has to be cooked fairly well throughout to be totally safe.

read the above 2 posts. I was talking about cuts of beef, not ground. although technically, if marinated properly, I would assume you could make even ground beef fairly safe to eat raw. but i wouldn't recommend it

actually that doesn't have nearly as much to do with it as the actual grinding process

it's the same theory as why you get a worse hangover from draft beer (bacteria in the pipes)


it's nearly impossible to completely and effectively clean a grinder.....there will always been tiny little crevices where meat can stick and bacteria can form...and it'll get into the next batch

some sausage comes already cooked, so make sure you check the label before you cook the shit out of it.

but yeah, I make my raw sausage crispy on the outside as well.

I'm just trying to help out those novice cooks that have smoked sausage in their freezers. If you tell them to cook the shit out of it, they will end up with jerky for the most part
