had beef carpaccio last night . . . never tried it before and was at a fancy restaurant the other night. i ate the whole dish w/out realizing it was "raw beef".

You got the AIDs now.
1/25/2009 11:30:08 AM
Yes
1/25/2009 11:30:21 AM
nope. but if you do, can I have your car?
1/25/2009 11:30:35 AM
We hope so.
1/25/2009 11:30:44 AM
how the hell did you not realize it was raw beef?if you didnt reliaze it wasn't raw it was either prepared terribly or drastically over saucedi've had many different styles of raw beef in a few countries and never had a problem
1/25/2009 11:30:57 AM
yeah, they've probably already killed 100 people with that dish.Raw beef is fine, as long as it's a quality piece of beef to begin with. Friendly advice, if the Carpaccio bothered you, avoid steak tartar.
1/25/2009 11:31:46 AM
beef is the same as fish. it's ok to eat raw as long as it has been handled properly and purchased from a reputable joint
1/25/2009 11:33:18 AM
steak tartare ftw
1/25/2009 11:34:31 AM
i could really go for some beef carpaccio right about now
1/25/2009 11:35:17 AM
ahah i was just thinking that
1/25/2009 11:35:38 AM
ME 2! LOL
1/25/2009 11:36:41 AM
this place was @ Eden Rock on South Beach ... i think it was Gia.it was thinly sliced, so I realized it was cold . . . but it wasn't totally pink. i later realized it was raw beef. like i said I never had it before ....
1/25/2009 11:37:32 AM
that steak tartare looks like it's been sitting out for a while.
1/25/2009 11:37:45 AM
when you said it wasn't totally pink, was it red, or brown
1/25/2009 11:38:13 AM
it was brown ... and i think it was beef tenderloin, but smashed thin with a mallet or cut thin.
1/25/2009 11:43:11 AM
unless it was contaminated you'll be fineit's not going to hurt you just because it was raw[Edited on January 25, 2009 at 11:45 AM. Reason : ^air can do that to meat....sorta like it makes scrambled eggs turn green]
1/25/2009 11:45:11 AM
shit, you can cook beef perfectly just by marinating it.
1/25/2009 11:49:06 AM
yeah...you'd probably run more of a risk that something in the marinade would make you sick than the actual beef[Edited on January 25, 2009 at 11:53 AM. Reason : adsf]
1/25/2009 11:51:52 AM
as long as it is a fairly acidic marinade, like most, then you should be fineusually when I make a steak I marinate it all day in garlic, worcestershire sauce, and a few other spices for about 8 hours. After that I basically just sear it on both sides for a minute each. Just enough to warm it up a bit[Edited on January 25, 2009 at 11:55 AM. Reason : a]
1/25/2009 11:52:41 AM
actually....i'm going to amend my statement to only include "cuts" of beefground beef is a different story...i know some people like it raw but you're much safer just cooking it a little more
1/25/2009 11:55:21 AM
yeah, fo sho. if you order a burger rare then you are just an idiot. because all the bacteria on the outside of the cut gets ground into the middle, so it has to be cooked fairly well throughout to be totally safe.
1/25/2009 11:56:20 AM
are you saying its possible to season and eat ground beef ? i'm not sure if that's safe.
1/25/2009 11:57:02 AM
read the above 2 posts. I was talking about cuts of beef, not ground. although technically, if marinated properly, I would assume you could make even ground beef fairly safe to eat raw. but i wouldn't recommend it[Edited on January 25, 2009 at 11:59 AM. Reason : a]
1/25/2009 11:58:25 AM
actually that doesn't have nearly as much to do with it as the actual grinding processit's the same theory as why you get a worse hangover from draft beer (bacteria in the pipes)it's nearly impossible to completely and effectively clean a grinder.....there will always been tiny little crevices where meat can stick and bacteria can form...and it'll get into the next batch
1/25/2009 11:58:36 AM
^ good point
1/25/2009 11:59:34 AM
that's why you're supposed to cook the shit out of sausage too[Edited on January 25, 2009 at 12:00 PM. Reason : my mom will cook sausage until it's crispy on the outside]
1/25/2009 12:00:21 PM
pork sausage?i cook the shit out of pork sausage
1/25/2009 12:03:18 PM
some sausage comes already cooked, so make sure you check the label before you cook the shit out of it.but yeah, I make my raw sausage crispy on the outside as well.
1/25/2009 12:04:13 PM
well durh
1/25/2009 12:04:45 PM
fuck you
1/25/2009 12:05:16 PM
well we make our own pork sausageliterally from beginning to end....so it's most definitely raw
1/25/2009 12:05:23 PM
now with more buttholes!
1/25/2009 12:05:59 PM
I'm just trying to help out those novice cooks that have smoked sausage in their freezers. If you tell them to cook the shit out of it, they will end up with jerky for the most part
1/25/2009 12:07:17 PM
draft beer ? bacteria ? tell me NO !!!1 ... i love cold Stella on draft. Awesome !
1/25/2009 12:07:44 PM
haha...actually that's one of the few things that just get thrown in the field...along with the bladderpretty much everything else is used for something[Edited on January 25, 2009 at 12:08 PM. Reason : draft beer won't kill you...but that's why you get such terrible headaches from it]
