64 bit allows addressing of more ram and larger instructions so in theory more crunching per cycle.
If you buy a new computer, 64bit 7 is the way to go just cause more 64bit apps will come out in the future. If you're putting it on an old computer, the only reason not to do 64bit is if you have specific hardware w/out 64bit drivers that you really really need.
In terms of memory usage, all the hype about vista and windows 7 "using more ram" is retard echo-chamber bullshit. Its precaching common applications into memory you aren't using. It makes commonly used applications load faster. If an app needs more ram, stuff will get dumped out of cache to make room.
