Avocado and Feta Cheese Pasta
Ingredients 12 oz. penne 2/3 cup balsamic vinaigrette 1 cup diced red bell pepper 1 cup diced green bell pepper 1 cup feta cheese 2/3 cup chopped red onion ½ cup black olives pitted, coarsely chopped 1 Tbsp. chopped garlic 1/4 cup chopped parsley 1 lb. avocados
Preparation
1. Cook pasta in salted, boiling water until just tender, about 10 minutes; drain well. 2. While still warm, toss with vinaigrette; cool. 3. Fold in remaining ingredients. 4. Plate 1-1/2 cups as an entrée salad or 1/2 cup as a side dish. 4/8/2010 3:40:44 AM |

Lots of great recipes! Your best bet is to visit the California Avocado Council's website: http://www.avocado.org/recipes/
Here are a few I like:
Chilled Avocado Soup Ingredients: 1 tablespoon canola oil 2 yellow onions, chopped 4 cloves garlic, chopped 2 jalapeno chiles, stemmed, seeded if desired, and minced 4 ripe avocados, peeled and cut into chunks 1 quart chicken stock 1/2 cup crema, creme fraiche or sour cream 1/2 cup chopped cilantro 2 tablespoons freshly squeezed lime juice ***Corn and Tomato Garnish:*** 2 ears corn, roasted or boiled, kernels cut off and reserved 2 Italian Roma tomatoes, seeded and diced 2 scallions, washed and sliced into thin rings 1/2 teaspoon salt 1/4 teaspoon pepper 1 tablespoon creme fraiche or sour cream
Directions:
Heat oil in Dutch oven over low heat; add onions, garlic, jalapenos, salt and pepper and cook, stirring, 10 minutes or until translucent. Add avocados and stock and bring to a simmer. Simmer 15 to 20 minutes or until avocados are soft. Add cream, being back to a simmer, then puree with immersion blender until very smooth. Stir in cilantro and lime and serve, topped with corn and tomato garnish.
Corn and Tomato Garnish: Stir together corn kernels with all other ingredients in a small bowl. Serve 2 spoonfuls on top of soup.
Serves/makes 4
Deviled Eggs With Avocado Filling
Ingredients
* 12.000 12 eggs * 0.500 ½ cup mayonnaise * 4.000 4 tsp. prepared mustard * 0.500 ½ tsp. salt * 0.250 ¼ tsp. pepper * 0.500 ½ med onion finely diced * 1.000 1 stalk celery finely diced * 1.000 1 large California Hass avocado
Instructions 1. Hard boil and cool eggs. Remove shells, slice in half and remove yolk. Set aside white to be filled. 2. Sauté onions and celery until tender. Place sautéed onions and celery into food processor (or blender) and puree. Add yolks, mayo, mustard, salt, pepper and avocado and blend well. 3. Very simple but good--egg salad sandwich topped with sliced avocados. Best on toasted wheat bread.

INGREDIENTS 2 ripe avocados 1/2 red onion, minced (about 1/2 cup) 1-2 serrano chiles, stems and seeds removed, minced 2 tablespoons cilantro leaves, finely chopped 1 tablespoon of fresh lime or lemon juice 1/2 teaspoon coarse salt A dash of freshly grated black pepper 1/2 ripe tomato, seeds and pulp removed, chopped Garnish with red radishes or jicama. Serve with tortilla chips. METHOD 1 Cut avocados in half. Remove seed. Scoop out avacado from the peel, put in a mixing bowl. (See How to Cut and Peel an Avocado.) 2 Using a fork, mash the avocado. Add the chopped onion, cilantro, lime or lemon, salt and pepper and mash some more. Chili peppers vary individually in their hotness. So, start with a half of one chili pepper and add to the guacamole to your desired degree of hotness. Be careful handling the peppers; wash your hands thoroughly after handling and do not touch your eyes or the area near your eyes with your hands for several hours. Keep the tomatoes separate until ready to serve. Remember that much of this is done to taste because of the variability in the fresh ingredients. Start with this recipe and adjust to your taste. 3 Cover with plastic wrap directly on the surface of the guacamole to prevent oxidation from the air reaching it. Tomato and Avocado-Goat Cheese Crostini
1 loaf baguette bread 2 teaspoons, garlic, minced 1/3 cup olive oil 2 ripe avocados 4 ounces mild goat cheese 1/4 teaspoon coarse salt Freshly squeezed lemon juice 1 1/2 cups Roma tomatoes, seeded, diced 1/4-inch 2 tablespoons extra-virgin olive oil 1/2 teaspoon coarse salt 1/4 teaspoon ground black pepper 1/4 cup fresh basil, chopped Small basil leaves for garnish
Pre-heat oven to 350 degrees F.
Slice bread into 1/4-inch thick diagonal slices. If you're working with a large loaf, you'll then want to halve each slice again.
In small bowl, combine garlic and olive oil. Brush bread slices lightly with garlic oil mixture. Arrange on sheet pans in a single layer. Bake crostini for 10-15 minutes until golden brown and crisp. Remove from oven and let cool. NOTE: These can be made ahead of time and stored in an airtight container. Be sure to let cool completely before storing.
In medium-sized bowl combine avocados, goat cheese and 1/4 teaspoon coarse salt. Mix until smooth. NOTE: Add a little fresh lemon juice to prevent the avocado from browning.
In separate bowl, combine tomatoes, olive oil, 1/2 teaspoon coarse salt, pepper, and basil.
To serve, spread each crostini with approximately 1 tablespoon of avocado mixture, then top with tomato-basil mixture. Garnish with small basil leaves if desired. Place on a large serving plate.

the only problem i have with avocado is how quickly they turn brown. they're like bananas and apples...once sliced, you have a very small window of time before they start getting ugly.
any tips on how to prevent brownage?

Cheesecake Factory makes an incredible Avocado Eggroll. Here's a copycat recipe, and it's amazing.
Dipping sauce * 3-4 teaspoons white vinegar * 1 teaspoon balsamic vinegar * 1/2 teaspoon tamarind pulp * 1/2 cup honey * 1 pinch powdered saffron * 1/2 cup chopped cashews * 2/3 cup fresh cilantro * 2 garlic cloves * 2 green onions * 1 tablespoon granulated sugar * 1 teaspoon ground black pepper * 1 teaspoon ground cumin * 1/4 cup olive oil
Egg Rolls * 1 large avocado, peeled, pitted, & diced * 2 tablespoons sun-dried tomatoes packed in oil, chopped * 1 tablespoon minced red onion * 1/2 teaspoon fresh cilantro, chopped * 1 pinch salt * 3 egg roll wraps * 1 egg, beaten
Directions
1. Stir together vinegars, tamarind, honey, and saffron in a microwave safe bowl, and microwave for 1 minute. 2. Stir until tamarind is dissolved. 3. In a blender, Puree tamarind mixture, cashews, 2/3 cup cilantro, garlic, onions, sugar, pepper, and cumin. 4. Pour mixture into a bowl and stir in oil. 5. Refrigerate until ready to use. 6. Gently stir together avocado, tomatoes, onion, 1/2 teaspoon cilantro, and salt. 7. Distribute filling evenly onto center of each egg roll wrapper. 8. Position a wrapper so that a corner is pointing toward you; fold bottom corner up, 1/4 of the way over the filling. 9. Brush remaining corners and edges of the wrapper with egg, roll up from side to side, fold top corner over all and press to seal. 10. Repeat with remaining wrappers. 11. Continue by deep-frying the egg rolls in 375 degree oil for 3-4 minutes, until golden brown. 12. Drain on brown paper bags. 13. Slice egg rolls diagonally across middle and serve with prepared dipping sauce!

Yes! It's amazing! If you go to the Vietnamese restaurant Green Basil on Capital they sell avocado bubble tea there
When I make an avocado shake I usually do:
1/2 avocado, sliced and frozen 1/2 banana, sliced and frozen 1 teaspoon honey

Avocado Gratin
1 avocado 2 slices of ham, cut into strips 2 tablespoons mayo 1 clove garlic, minced salt and pepper to taste shredded pepper jack cheese
