The Book of Genesis (KJV) is crucial. Great use of language, neat imagery, and it'll tell you everything you need to know about the Judeo-Christian religions (i.e. they're fucking crazy). That's a big deal, 'cause you can hardly turn a page in a work of English without tripping over a Biblical reference.
You should certainly read Huckleberry Finn by Mark Twain and Lolita by Vladimir Nabokov. They're quintessentially American stories that are great examples of unreliable narrators, and both feature beautifully versatile use of English. They're really turn you on to the possibilities of the fiction novel.
For non-fiction, I just finished Ray Kurzweil's The Singularity is Near. Given how quickly we're advancing beyond biological intelligence, you ought to read that to correct your perceptions of what it means to be human and to be intelligent—kind of a primer for the future.
A Different Universe: Reinventing Physics from the Bottom Down by Robert Laughlin is another good brain-adjusting read. It hips you to emergence as a key feature of physical reality. True story: I tried reading Snow Crash for the first time when I was 20. I couldn't get off the first page. I can't really put my finger on it, but I think it has something to do with the fact that he writes sentences like, "The Deliverator belongs to an elite order, a hallowed subcategory."
