hay tdub, what should i do with this beet juice? beet water technically, but it still looks cool and smells good.

yeah, i canned beets yesterday so this some leftover beet water.


today i used about 10 lbs of tomatoes from my yard in some tomato chutney. time to stir and this shit is about ready to put in jars.

I do this with any and all leftover pickling juices

just boil some eggs, shell em, and stick them in there for a few days at least

we ate pink couscous yesterday and I've also done mashed beets and potatoes. 1:2 or 1:1 even is great. which is worse for you, beets or potatoes??? I didnt grow any potatoes this year, and my beets were kinda small. i had to supplement with some locally pro-grown stuff.

I was going to say make pink rice but if you already did pink couscous then I assume you have thought of that as well and I have nothing else to add.

i ended up making beet limeade, but it was a couple hours before dinner so it turned kinda brown-ish by the time we ate. i figured adding acidity would help it keep the color, but i diluted it a lot so i guess it oxidized.
