Probably my favorite thing to eat.

I go to a place today and order one and they tell me cheese costs extra. Wtf

Well, the likely alternative would be to have it come with cheese but cost more. Then, if someone wanted it without cheese, they could order it that way, but it'd likely still cost the same.
With the way you described, the place doesn't rip anyone off like that. So, until restaurants start actually lowering the menu price when you ask to omit items from your order, (unlikely) charging extra for add-ons is the best way for consumers.

Of course, consumers are generally stupid.
They complain more over having to pay an extra $1 to get cheese on their $2 burger, than over a $3 cheeseburger.

i love a good french dip

but a bad french dip is horrible

i <3 the times french dip. i recently discovered it and it is my favorite thing

au jus...i could drink it!

i don't think the french dip sandwich is supposed to come with cheese, but yeah, a lot of places do add cheese.

French Dips aren't suppose to come with cheese traditionally, not that you can't add it though.
