i like making those eggplant rollup things with it
kinda like maniccoti/lasagna but different
i mean you just make strips of eggplant (you can even do it eggplant parm style, but i don't ie: w/ breading) and make a cheese mixture (plain cheese, but i like olives, etc in mine, you can also add meat) then roll it up, top w/ red sauce and melted mozz or parm cheese.
also lasagna is delicious. i like spinach lasagna myself or you can even do lasagna but use eggplant or zucchini as the noodles. stuffed shells. anything really. i like it all!
also loved the stuffed peppers idea! that sounds delicious.
