^yep. Right on the heat to get 'em seared/grill marks. Then place them away from the heat (around the outside or on the swinging tray thing) and they'll basically bake until done. If you got a good hot sear they'll still be plenty moist.
Or you can par-boil or par-bake in water, lemon juice, and your favorite seasonings then finish on the grill. 3/2/2011 11:37:34 PM |

I've done chicken wrapped in aluminum foil with some marinade on charcoal. You can take it out at the end if you want smoke and grill marks, or sear it first and then make the aluminum boat. Anyway, it'll be moist. 3/3/2011 9:53:04 AM |

Use halves insead of quarters. My dad & brother can somehow cook BBQ chicken for 2.5 hours on a weber. It's soooooooo good.
He puts the coals in a circle and puts the chicken in the middle. Indirect heat

I have a gas grill and cook chicken on it pretty much once a week. I cook them on Low (about 350) for 40 minutes, flipping every 10 minutes.
And I only open the grill to flip.
