So, all my life I thought BBQ was only vinegar basted garbage that I now know is eastern NC style. Recently I tried western BBQ at Dickeys in Cary and that shit is delicious. Since Dickeys seems to be more of a franchise, what are some mom and pop type places that specialize in western that are better? Bonus points if they do good brisket. 8/24/2011 7:21:06 AM

As far as I'm concerned you can't get any good western bbq east of Burlington.
Also a good western NC sauce shouldn't be that thick. In most of the restaurants in the eastern bbq region that provide a "western" sauce its always thick like what they would use in Memphis or Texas or something. 9/16/2011 11:04:28 AM

i am always confused by the barbecue argument. the best "barbecue" i have ever had is from a whole pig cooked in one of those big smoker things. just pull the meat off the bone, so delicious with no sauce. is it still barbecue if there is no sauce?
also, i grew up in salisbury so i'm not sure if the places there are considered eastern or western style. but the pork never came with any sauce on it, it was always on the side, and there was vinegar and the sweeter/thicker (i guess what y'all are calling "ketchup based") sauce. although it tastes nothing like ketchup, so that is a little confusing. either way, i'm pretty sure i always put both sauces on my sandwich, along with cole slaw (usually white, although i do enjoy the red style cole slaw also!)
either way, most of the places i've been to in nc have that meat that basically looks like it was shredded, and if there is vinegar sauce on it its like a big soggy goopy mess. looks disgusting, tastes mediocre, and i always felt like there were some "mystery" parts chopped up in there.
i do love some brisket every now and then too. i think i just prefer when the meat is not shredded. 9/16/2011 10:48:31 PM
