You could rabbet one side of the trim to fit into the j-channel and rabbet the other side for vinyl siding to fit in. Kind of like a J-channel extension. What brand windows do you have?

Chance, as a fellow resident of Morehead City, I wouldn't board up. There's not a ton of point to it if you live in a wooded area with a lot of wind break (most of Morehead does). I'd just tape up the windows if such is the case for you.
