I had already made the poppers before I had a chance to look at your response. I will def make those! Where would one acquire said spicy chicken sausage? That sounds really tasty.

It was def a pain in the ass to roll the peppers in egg wash and then crumbs because of the jalapeño skin being so smooth/oily. I hope they turn out ok. I honestly HATE breading things because I NEVER do it right.

Lightly dust the peppers in flour or cornmeal first. That will help the wash stick which will help the breading stick. You do the same thing when you fry chicken.

I got spicy chicken sausage I think from the deli counter at HT. I could be mis-remembering though. But pretty sure. Of course you could use non-chicken sausage. I was just being special because I don't eat pork sausage.

I'd like to remove the sandwich aspect altogether.

Just chop up some apples, cheese, bacon. Mix it up with mayo. Maybe add some nuts. Done!
