I got home from vacation and my zucchini plant has gone out of control

Slice it up, soak it in a little red wine, salt and pepper it and throw it on the grill.
Also my wife got a turning slicer so she could make raw friendly pasta with our squash. She and 2 year old love it. 5/29/2012 2:11:56 PM

I keep meaning to buy one of those turning slicers. Maybe I'll break down and order one off Amazon this weekend.
I think I'll try making these tonight but add some ginger or something to it:

Sprinkle tops with sunflower seeds. Bake at 375 degrees F for 12 to 15 minutes, until toothpick comes out clean. Cool pans on rack for 5 minutes. Remove muffins; cool on rack." |

stuffed zucchini- cut them in half lengthwise, hollow em out, stuff em with breadcrumbs, tomatoey rice or quinoa, cheese, or even meatball/meatloaf mix, bake 20-30 min at 350°

preheat oven to 350. cut into chunks, strips, or discs. toss in olive oil and freshly grated garlic. lay out on sheet with no overlap. sprinkle with salt, fresh pepper, and a fresh parmesan. bake until done. take out of oven. shred more fresh paremesan on top. profit. 5/29/2012 2:39:15 PM

pinterest has a lot of zucchini recipes.
stuff zucchini is good like GREEN JAY mentioned. also doing zucchini fries, grilled zucchini, zucchini cakes (like potato cakes), zucchini bread, zucchini lasagna.

Ended up just grilling some zucchini last night.
Coworker gave me this recipe and it sounds pretty good.

1 can of cream of chicken (or cream of mushroom) 1/2 cup mayo 1 egg pack of shredded sharp cheddar 3 squash 3 zucchini bread crumbs salt, pepper
preheat oven to 350 cur veggies into chunks 3/4 inch thick put in a bowl, add salt/pepper, microwave until slightly softened mix cream of chicken, mayo, egg, cheese in with veggies (save a little cheese for later) bake for 20 minutes, stirring once or twice remove, stir once more, top with cheese and bread crumbs bake for 10 more minutes 5/30/2012 2:06:17 PM

just substitute the noodles for thin sliced zucchini.
