Anyone else into cheese making?

I got some labneh hanging in my fridge right now - I'm working through the beginner recipes on http://biology.clc.uc.edu/Fankhauser/Cheese/yogurt_making/YOGURT2000.htm, So far so good. Yogurt is super easy to make, I don't think that Ill ever buy it again.

Can't wait to be good enough to make blue cheeses. So any of you out there do this? Any tips? I was thinking of buying a nice stainless steel pot to replace my double boiler.

I have done that mozzarella recipe before. It's super easy. I also used to make paneer a lot which is very easy to make. This is the site I used for making paneer: http://www.indiansimmer.com/2011/01/how-to-make-paneer-indian-cottage.html

I just made a blue cheese. Now I hate to wait a month.... I don't think I have that kind of self control.

distract yourself with homemade ricotta in the meantime. you lazy fucks can do it in the microwave. it's not actually real ricotta, really the precursor to paneer or queso blanco, but it has the same texture and taste and you don't need 500 gallons of whey.

I have 5 milllion gallons of whey, maybe ill make some ricotta. I hate that stuff though

I've made mozzarella before, but it was just ok. I made it with 2% milk, though. I figure I need to do it again with whole milk like an OG.

whey is great to use in bread in place of water or milk, the bread rises crazy high

^ woah, good to know. My gf makes bread all the time - Ill let her know to try whey next time. Do you use it in a 1-1 ratio where you would have used water?

yeah, this is an official no-bake august. having the oven set to 480° for a couple hours makes the AC start shooting ice crystals.
