i looked within and found that i run away from the real world to TWW, to hide from that which is real in that which isn't...it was a realization a long time in coming and i owe it all to you

really well! though, admittedly, i used a friend's starter

this is what i baked yesterday:

INGREDIENTS

4-3/4 cups unbleached flour
3 tbsp white sugar
2-1/2 tsp salt
1 cup warm water
2 tbsp butter (softened)
1-1/2 cups sourdough starter
1 egg (white only)

DIRECTIONS

1.) combine flour (just 1 cup at first), sugar, salt, water, butter, and starter and mix
2.) add remaining 3-3/4 cups flour gradually
3.) turn out dough and knead until ready (i did 10 minutes or so)
4.) place in greased bowl, cover and allow to rise for 1 hour or so (it should approximately double in size)
5.) punch down and place in loaf pan (or pans, i did two smaller loaves) and allow to rise for an hour or two (longer is better)*
6.) lightly beat egg white and brush over top of loaves
7.) bake at 375F (190C) for 25-35 minutes or until done**

* when i'm not using my bread machine, i prefer to use a warm oven to get the dough to rise (just turn it on something low for a couple of minutes, turn it off, and place the dough in there...what i did with this loaf, however, was to make it in the morning and allow it to "cool rise" in the refrigerator for 12 hours, then baked it last night

** upon my friend's suggestion, i placed a small pan of water on the lower rack of the oven and allowed it to stay in the oven while baking the bread

^ make sure you let your starter sit for longer rather than shorter...in the past, i've let it sit for 48 hours before using it because i want as much sour taste as possible (and around NC, the "best" you're gonna get doesn't hold a candle to SF starter )
