My wife would put something on them and then bake them in the oven to make Kale Chips. They were pretty good that way.

All you really have to do is saute it. A little olive oil and some crushed red pepper, or sriracha, or perhaps balsamic. Salt and pepper. There are many other good things to do with it, but that's the easiest.

[Edited on March 2, 2013 at 8:33 PM. Reason : If the leaves have a really big rib, might want to take that out. Can also cut up big leaves. ]

crunchy kale chips in the oven rock... misted with evoo and sprinkled with some sweet and spicy seasoning.

This is what annoys me about the bagged chopped kale. Ribs all up in that shit.

do baked kale chips stay crispy? are they even crispy when they come out?

I've had kale at a whole foods bar before, they just steamed that shit with some raisins and cranberry. They were inedible, luckily they had a curry dish at the bar, it went down OK with the curry sauce.

Collards are better.

Kale, you're okay, but not great. Competition is stiff.

No, they don't. We tried to make some ahead of time once and they were all soggy by the time we wanted to eat them.

So in Jamaica they cook a very similar dish to collards and kale called callaloo. They cook it with salt fish, and it is amazing. I thought that I would never turn down collards ever, but that salt fish just kicks it up a notch.
