i've used hickory, pecan, apple, maple, and cherry. i like apple the best so far. when you get that thin blue smoke with apple, it smells so sweet.

that's what i like about apple. i can use it on just about everything. but yeah, there are certainly a few combos you don't want to do.
the bacon weave log thing is called a fatty. there are infinite variations, but basically a fatty is a breakfast sausage log that is smoked. the one i made is sometimes called a bacon explosion. i chopped up fresh jalapenos and grated some chipotle habanero cheddar. i made a big rectangle out of about a pound of breakfast sausage and rolled it around the jalapenos and cheese. then i rolled the log up into a sheet of bacon weave. smoked it until the internal temp was safe and the bacon was where i wanted it. we ate with the neighbors and had it as an appetizer. 8/5/2013 8:44:12 PM

i picked those up at the Eagle Island seafood market. i made the marinade/sauce with whiskey, homemade bbq sauce, and some other stuff. they were awesome.
