You can say hummus, hommos, hummos, hommus, but as soon as you use just one m, it becomes incorrect.
On the Arabic letter m in the Arabic word, there is a pronunciation symbol above it which tells the reader to double the sound of that letter. Those symbols are not written in normal daily usage, because most people know how to pronounce the words. But open the Quran and you will see the symbols on every single letter, to let the reader know how to pronounce every single word.
Arabic is a 100% phonetic language, exactly because of those symbols.
The Arabic word for hummus has exactly 3 letters, all consonants: h-m-s (see pic)
So how to pronounce it? The symbols tell you how.
The symbol on the h tells you to pronounce the oo as in book sound after the h sound. The 2 symbols on the m tell you to double the m sound and to pronounce the oo as in book sound after the m sound. The symbol on the s tells you to have a neutral ending at the s and not have a vowel sound after it.
(As I said, the symbols aren't written in daily life, not even in newspapers or books, only in the Quran or literature books)
And so the romanization depends on who writes it in terms of the vowels between the letters, but the m must be doubled.
Fun fact: hummus in Arabic actually means chickpeas... guess the people who made or named the dip made from them weren't too creative, whenever that was ![](images/beatup.gif)
You can see 2 symbols in the word in the middle in the pic...the one on top that looks like a small w is the one that means to double the consonant sound, and that's the one that goes on top of the m in the Arabic word hummus, I.e., the middle letter.
