Wild caught Atlantic salmon sauteed in Avocado oil topped with the stinkiest blue cheese I could find and a little sea salt.
Spinach & Beans (pinto + black) loaded with sriracha to make it spicy.
And a Mountain Dew to make it more extreme.

Sushi, but it was made from things we happened to still have after not going to the store for a long time. Somehow, making crab salad with actual crab instead of fake crab is actually not as tasty. Hoping the ice thaws today and we can actually leave our house.

Didn't have anything. Planned on having a baked sweet potato but then I wasn't hungry so I just didn't eat. Drank a few Miller High Lifes instead

If you haven't tried it before, may I suggest Gruyere in place of the Parmesan?

Last night: spaghetti carbonara (no cream); garlic sauteed in the olive oil under lower flame then removed before adding the bacon.

flank steak (marinated for 8 hours in my delicious soy sauce/olive oil/garlic/thyme/white wine marinade, grilled/baked alton brown style on cast iron), with stir fried broccoli/mushrooms/onions in the leftover juices/marinade from the steak.

Cross cut rib pot roast cooked for about 12 hours at 230°. yummmm. and here's how i did it.

In the oven. I cooked it in a le creuset-style heavy enameled iron casserole. After dinner, I shredded the leftover beef and mixed it well with the veggies and juice and smoothed the rest of the potatoes over it. boom, instant shepard's pie for the weekend.

I must admit that the dish cooked for 6 hours, then sat in the warm oven while i was gone for a few hours, then i cooked it a final 4-5 hours. the carrots still had a bit of crunch in the center. the onions and garlic were pretty soft though, and the celery was indiscernible. The parsnips were almost a tiny bit leathery and had a very complex interesting flavor. the meat and top layer of vegetables weren't fully submerged for most of the time either, I just pushed everything down for the final cook time.



I have huge cast iron dutch oven that I like to bake bread in and cook cobblers on coals. but I have yet to make a huge piece of meat in it yet. This has me thinkin' 'bout veal shanks.

Though I do love that Gruyere. I have been a valley over from where it's made and keep saying I'm going to visit and buy a whole wheel to take home.

Bought these enormous tiger prawns from Harris Teeter; they were probably about a half a pound each.
Sauteed them in butter and olive oil then removed them from the pan.
Then sauteed red onion, shiitake mushroms, garlic, paprika, and cayenne.
Made a pan gravy.
Served it and shrimp over thick parmesan grits.

Delicious. Would nom again.

Was scraping the bottom of the barrel last night for supper...running low on groceries.

But I went with ramen noodles (didn't use the flavor packet), added mushrooms, and frozen vegetables, and chicken thigh. Wasn't bad for a quick fix supper, given that my pantry is pretty bare at the moment.

made fresh Pico de Gallo over the weekend and browned two pounds of ground beef so I've been using them plus cheese, sour cream and shredded lettuce for tacos and nachos throughout the week, it's been great.

The Gringo and his wife were kind enough to bring us over a bunch of meatballs and sauce to help us out since we just had a baby... so cooked noodles and made spaghetti and meatballs
had meatball sandwiches prior to that.

i swear i cook more than just beef. but I love braised beef shanks. This was braised wine with garlic and caramelized onions. A little mashed celeriac and braised endives to round it out.

I made salmon baked in a foil boat with lemon, white wine, garlic, butter, dill, S&P. And roasted asparagus. And three clementines.

Tonight was a quiche night. Anybody who says "real men don't make quiche" doesn't know that they're a pie made from EGGS AND CHEESE AND BACON.


Mine is a simplified version that doesn't use milk/cream. I fry up a half lb of bacon extra crispy, reserving a bit of the drippings. I then use those to slowly caramelize about half of a large yellow onion, diced very finely. Meanwhile I grate 4 cups of cheese (sharp cheddar and jack in this case, but mozzarella, swiss, grueyere, etc are all good). Mix with 5 beaten large eggs, S&P to taste, one package of frozen spinach microwaved and then drained of all water (toss it with the onions in the hot pan to get the last bit of water out). Mix and dump everything into a 9" par-cooked deep dish pie shell and bake at 350 for an hour or until a knife inserted comes out clean.

Dinner and/or breakfast of champions.
