I'm surprising Brett with a little crock pot action since I got off work early today. Today's meal is creamy Italian chicken. Will post recipe once I'm not on my phone....and if it turns out well

I don't see why not. I'd probably change out the sauce though.

8 teaspoons dried onion flakes 1 teaspoon onion powder 1/4 teaspoon seasoned pepper
and then I add low sodium beef stock until I'm at the moisture level I need rather than using beef bouillon.
lol oh yeah mix all the dried together and then measure out what you need for the recipe. Probably should have specified that

Ok, it was delish!!!
Ingredients:
4 boneless skinless chicken breast halves 1 envelope Italian salad dressing mix 1/3 cup water 1 package (8 ozs.) cream cheese, softened 1 can (10 3/4 ozs.) condensed cream of chicken soup, undiluted 1 can (4 ozs.) mushroom stems and pieces, drained Hot cooked rice or noodles Preparation:
Place the chicken breast halves in a slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on LOW for 3 hours. In a small mixing bowl, whisk together cream cheese and soup until blended. Stir in mushrooms. Pour cream cheese mixture over chicken. Cook 1 to 3 hours longer or until chicken juices run clear. Serve Italian chicken with rice or hot cooked noodles.

I always think it's scary to put traditional crock pot recipes into a calorie analyzer Like I just did the one above and this is what it came up with:

going to try a new crock pot recipe tomorrow night (for sunday football):
The Meat
1 lb sirloin steak, cubed bite-size 4 slices bacon (or 3 Tbsp vegetable oil) 1 lb chorizo sausage (or ground pork)
The Aromatics
2 medium onions, chopped 1 bell pepper, seeded and chopped 2 celery ribs, chopped 4 garlic cloves, smashed
The Other Good Stuff
1 (4 ounce) can diced green chilies 2 (16 ounce) cans kidney beans, drained and rinsed 1 (16 ounce) can corn (optional) 1 (16 ounce) bottle dark beer or 1 (16 ounce) bottle ale 1 (28 ounce) can chopped tomatoes
Cowboy Steak Seasoning
3 tablespoons chili powder 1 tablespoon coffee beans, dark freshly finely ground 1 tablespoon paprika 1 tablespoon ground cumin 1 tablespoon brown sugar 1/2 teaspoon salt 1/2 teaspoon dry mustard 1/2 teaspoon ground coriander 1/2 teaspoon fresh ground black pepper 1/4 teaspoon cayenne (or to taste)
Directions:
1 Turn the crock pot on to high. 2 Prepare the Cowboy Steak Seasoning 3 Roll cubed steak around in the seasoning mix until they are thoroughly coated. 4 In a large, heavy fry pan over medium high heat, brown off the bacon (if using) until crisp. 5 Remove and drain on paper towels or clean newspaper, reserving the drippings. 6 Brown the coated cubes of steak in the bacon drippings (or oil), working in batches if necessary. 7 Transfer browned steak to the crock pot. 8 Add the chorizo or pork and cook it down, stirring, for about 5 minutes. 9 Transfer the chorizo or pork to the crock pot. 10 Add all the “aromatics” to the fry pan and sweat them down, stirring frequently, about 5 minutes. 11 Transfer them to the crock pot. 12 Stir in all the “other good stuff” and the reserved bacon to the crock pot. 13 If there’s not enough liquid to cover, add some beef stock or more beer. Put the lid on. 14 Let the mixture come to a simmer, taste and adjust the seasoning to taste and let it simmer at least another hour. 9/23/2011 7:56:32 PM |

so my korean BBQ short ribs were alright, not nearly as tasty as I would have liked.
also, i was supposed to remove the meat and let cool and slice into bite size pieces before the final step. But the short ribs turned almost into roast, just pulling apart into shavings rather than being able to slice into strips/pieces. was this a result of being in the cooker too long or a result of the meat? 9/26/2011 9:37:01 AM |

Greek yogurt is a good substitute for things like sour cream and mayo, but I wouldn't use it for cream cheese. And I also wouldn't try it in a crock pot.

I say screw the nutritional facts, try that recipe as it was written- that on top of some pasta was freaking awesome
also, the chili recipe I posted- AMAZING!!! I took out the coffee and celery, and used an orange pepper, and couple different spices, a spicy sausage with it- it was awesome. The only thing I might do different is figure out some way to make it thicker (some sort of flour or something? i dunno...). If you have them, I'd recommend adding cumin and some other kinds of pepper to that recipe.

I saw his recipe and although it sounds delish, its more work than I wanted to do right now
I added in a can of diced tomatoes with green chilies and used a chili powder blend which has cumin in it. I also added in some fresh oregano from the garden. Next time, when I have more time I wont use a pre-made chili powder blend. I'll use fresh ingredients instead. Also in a week or so I'll have some hot peppers from the garden I can use instead of the canned green chilies. 10/8/2011 8:51:13 PM |

I was at Whole Foods the other day and they were giving out samples of this jerk sauce made in Raleigh:
It is ridiculously tasty.

Slow Berry Cobbler
Total Time: 3 hr 10 min Prep 10 min Cook 3 hr 0 min
Yield: 10 servings
Level: Easy
Ingredients Filling:
1 (10-ounce) bag frozen strawberries 1 (10-ounce) bag frozen blueberries 1 (10-ounce) bag frozen raspberries 1/3 to 2/3 cup sugar, depending on your level of preferred sweetness 1/2 cup baking mix
Topping:
2 1/4 cups baking mix 1/4 cup sugar, plus 1/4 cup 4 tablespoons butter, melted 1/2 cup milk 2 teaspoons ground cinnamon
Directions
Spray the insert of a slow cooker with nonstick cooking spray.
In a large mixing bowl, toss together all the frozen fruit, sugar and 1/2 cup baking mix. Transfer the fruit to the slow cooker. In another large mixing bowl, stir together 2 1/4 cups baking mix, 1/4 cup sugar, melted butter and milk with a wooden spoon. With your hands, drop bits of dough on top of the fruit in the slow cooker. In a small mixing bowl, stir together the remaining 1/4 cup sugar and ground cinnamon. Sprinkle the cinnamon sugar on top of the dough and place the lid on the slow cooker. Turn the power onto high and slow cook for 3 to 4 hours until the topping has puffed and the fruit is bubbling.
