Cafe Luna has an awesome pear cream sauce that they serve on stuffed cheese pasta

That looks really good! Did you hand-roll the pasta? The problem I had when I made it by hand was I felt like the pasta was too thick. I could have gotten it thinner, but I only realized it after I was done. 12/27/2010 8:13:18 PM |

I hand rolled the dough and then I took a cup opening (~3 1/2 in in diameter) to make circles, edged with egg, folded the filling, and sealed the edges with a fork. I did make the dough thin but I could prob have gone thinner. I was just scared that I would make it too thin and the filling would fall out in the boil.

I think that one may have been my first food thread. Did you see my striped ravioli on facebook a few months ago? They were OK, but the filling was a little bland and the dough was chewy because it was too thick (I found it pretty hard to roll out the dough with the stripes much thinner). I think I made the filling too bland as well. I will try more garlic/salt/pepper/other spIces.
skwinkle: You should make a really spicy filling for ravioli that I will in turn gank. I am not very good at marrying flavors yet like you are.
