do you mix the deer meat with any type of fat when you grind it into burger? I want to say that my uncles up north mix in pork fat, but I might be wrong. or that might be when they make deer sausage. not sure

^^ beef fat when making hamburger, Pork fat and spices (sage, salt, white black and red pepper, etc.) for sausage

For grilling, a little fat will make the burgers juicier. For meatloaf or spaghetti or other things where the meat will be cooking in sauce, can go either way.

I've ground venison without added fat before. The hamburgers were sort of dry, but it was fine in everything else.

Do you mean you need the added fat to get it through the grinder? Never had that problem before.

nah, you don't need the fat to get it through the grinder, but the fat helps it cook without drying out

my wife is a vegetarian, and i cannot eat an entire deer in a year.

the next one i get, i'll post it up

ill give you the whole thing in exchange for helping me "clean" it.

(*I will probably shoot my next one over Christmas Break, so unless you want to drive to Raleigh to get it, I suggest you live close by)

^^ i'd be happy to help...i've never "cleaned" a deer before, though i'd really like to learn

i have, however, butchered ostriches before

i'll return to you some jerky, if you'd like (and if it comes out well...i've never made deer jerky, just beef, turkey, and ostrich)

This link is a list of places that will process deer for you. Alot of them, you have to have the deer gutted before taking it to them. Some of them, you have to have the deer skinned and quartered. Just call before you take it.

if you eat deer once a week, one whole deer won't last but a few months tops. deer are not like cows there's not that much meat.

thats the thing...

i don't eat deer once a week

and i refuse to kill a deer that will go to waste. I have donated to hunters for the hungry, but Sanford is too far to cart a carcass on a regular basis.

I don't know where you live, but I know that there is a slaughtering house relatively nearby that will dress and package the deer for you for about $30.00. I can't remember the exact price, but they do it very reasonably and package the meat ready for the freezer any way that you want it - ground, tenderloin, etc. From what I've seen, the way they wrap it fends off freezer burn well too. My husband's cousin does this a lot for ones that he has killed himself, and he says it's very reasonable for the price per pound that you end up getting for the meat. I'm not sure where would be closest to you, but I'm sure there is a slaughterhouse fairly nearby that can help. Good luck!

Venison is about the most lean meat you can get. In fact, almost all of the preparations of venison include adding some sort of fat, whether it be pork fat or beef fat.

I have slightly better idea. The place is now run as Tiny's Quick Pic or some such..the dude that owns the building got into trouble with the law for tax evasion or something, but apparently they are still running the deer --> sausage and steaks, etc. in the meat department.

It sounds kinda shady, but I hear it's legit.

I have a couple friends that are going hunting this weekend so I will let you know. They have already promised me all the meat from whatever they kill since all of their freezers are already full. I don't have a chest freezer so I definitely won't be able to keep all of it, but you will have to drive to Greensboro to get it.

^ wrong. Dogs digestive systems are way different than ours, and can tolerate many bacterias such as salmonella and others often found in raw foods. Haven't you ever seen a dog drink out of the muddiest puddle in the back yard? Raw chicken and other raw meats are VERY good for dogs. A lot of champion show dog breeders feed their dogs raw chicken diets, as well as other raw meats.

you can leave the bones in as well. since the chicken isn't cook, the bones are soft and not brittle so you don't have to worry about them splintering and tearing up your dog's insides.

I would be very interested in purchasing any deer meat that anyone has extra. I do not have the time or inclination to deal with dressing or butchering it.

I am especially interested in tenderloins, burger, sausage. I would not mind having a ham or shoulder.

If you have extra already packaged up please send me a message and we can discuss a price (either overall or per pound).
