I don't even know if they make the tequila lime ones anymore. But the Honey BBQ strips are good too. Personally, I deep-fry. But cleaning the oven or grill is a little easier then cleaning the fryer. Sometimes in the oven I will sauce first, then cook. Otherwise I sauce after they are done with one of the following recipes:
Hot Sauce Minced garlic - 2 cloves/dozen wings Habanero Peppers - 1/dozen wings (gutted and de-seeded) Crushed red pepper flakes - tablespoon/dozen wings Butter - half cup/dozen Hot sauce (I like Pete) - cup and half/dozen
Melt butter over medium heat. Add garlic, habanero, and red pepper flakes. Cook until garlic starts to brown (don't burn). Add hot sauce and simmer until wings are done. Watch out, these fuckers are HOT!
Asian Wings Soy Sauce - 1/2 cup/dozen brown sugar - 1/2 cup/dozen
Mix together, add before (I usually use this sauce to marinate before the grill/oven) or after.
Sweet/Spicy BBQ Wings BBQ sauce - 1.5 cup/dozen pancake (or maple) syrup - 1/2 cup/dozen brown sugar - 1/4 cup/dozen
Mix together and heat over medium heat. Add once wings are done. Shit is good on ribs and tenderloin too.

Sometimes what I do is I'll let them marinate overnight, then I bake them for only 10-20 minutes. Then I toss them in the scallions and sesame seeds, bring them to whatever BBQ we're attending/having, and finish cooking them on the grill. Here's one for fake jerk chicken:
* 1 onion, chopped * 2/3 cup finely chopped scallion * 2 garlic cloves * 1/2 teaspoon dried thyme, crumbled * 1 1/2 teaspoons salt * 1 1/2 teaspoons ground allspice * 1/4 teaspoon freshly grated nutmeg * 1/2 teaspoon cinnamon * 1/4 cup minced scotch bonnet or habanero pepper, or to taste * 1 teaspoon black pepper * 2 tablespoons soy sauce * 1/4 cup vegetable oil * 18 chicken wings
In a food processor or blender puree the onion, scallion, garlic, thyme, salt, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce, and the oil.
In a large shallow dish arrange the wings in one layer and spoon the marinade over them, rubbing it in (wear rubber gloves). Let the wings marinate, covered and chilled, turning them once, for at least 1 hour or, preferably, overnight.
Arrange the wings in one layer on an oiled rack set over a foil-lined roasting pan, spoon the marinade over them, and bake the wings in the upper third of a preheated 450°F. oven for 30 to 35 minutes, or until they are cooked through. 2/25/2009 6:49:18 PM |

raw chicken wings (flats and drums) cayenne powder garlic powder onion powder butter hot sauce
oven baking pan paper towels or napkins large bowl metal skewers basting brush fire pit or grill with grill rack
Preheat oven to 400°. Drain and dry the wings. (blot them with paper towels) Dry rub the spices (and optional salt) onto the wings. Put the wings in a single layer on a large baking pan, and bake for 10 minutes. Cool for 5 minutes. While baking and cooling the wings, melt the butter, and grease a bunch of metal skewers with it. Light a cooking fire (charcoal or wood). Double-skewer the wings, alternating between flats and drums. (2 skewers through each piece) Put hot sauce in a large bowl and mix in most of the melted butter. Brush the remaining butter onto the partially-cooked wings and grill rack. (don't cross-contaminate the hot sauce!) When the fire is right (hot coals, no flames), place the grill rack fairly close to the coals, and put the chicken on. DON'T GO ANYWHERE! ALREADY HAVE YOUR BEER WITH YOU, ETC. Turn the skewers (they will be hot) every 30-45 seconds or so. (When you turn the last skewer, immediately start with the first one again, etc. Don't stop.) Continue turning the skewers until the wings are done. (10 minutes??) Be sure they are done. Remove the skewers directly into the hot sauce mixture, and remove the wings from the skewers. Toss wings in the sauce. Eat.
