Appenzeller swiss is the heat. Gruyere is also awesome. Really I like all kinds of cheese though...

Cottage Cheese (large curd) Ricotta Feta (fresh) Parmigiano Reggiano Ethnic soft fresh cheeses from various countries made of various milks (as long as there isn't too much salt)
I love cheeses... and love to try new cheeses. However, I don't like cheeses which are very pungent in smell or taste. As you will see, my list only has mild tasting cheeses.

same day fresh cheddar so it squeaks in your teeth is a little slice of heaven.
triple creme brie or camembert is great, goat and sheep milk brie are great too. I also love Emmentaler, a good stilton, roquefort or danish bleu, Sage Derby, and gournay (like boursin), and pecorino romano.
