Perhaps, but you can't attack Lexington style by saying it "needs" to have it. Both sauces "need" at least some flavors.

you people make it seem like Lexington style BBQ has this thick red sauce all over it. It's not KC Masterpiece "BBQ Sauce" like you'd find in texas or memphis. It's a runny sauce very similar to eastern vinegar based sauces just cut with a small amount of ketchup. i mean come on.

I heard that if they catch you putting ketchup in your BBQ at Ole Time they kick your teeth in and permaban you.

the only thing that i really don't like is lexington style tends to lean more towards chopped pork, while eastern is pulled. Clearly i enjoy pulled more.


and i'm an eastern fan in general, but spending my summers on the lake in lexington i've gotten used to their style and I do enjoy it too.


but to digress, that is a grill son, not a bbq

the sauce in the bottles at ole time is horrible stuff

if you catch them when the meat is seasoned properly it's fine

if it's not spicy enough you're fucked because you can't use the sauce

this is why we go to cooper's

^ plenty of eastern places chop instead of pull

I usually use a little bit of the sauce with the black top and give it a quick dousing with the vinegar.

What's interesting to me is that people get so hung up on the sauce debate, while I find that the shoulder vs. whole hog aspect makes a big difference as well.

The second ingredient in most ketchup is vinegar so at least those poor misguided fools to the west of us were trying. They just didn't get it quite right.

We're comparing:
95% vinegar + 5% red pepper = eastern
with
85% vinegar + 5% red pepper + 10% ketchup = lexington

(numbers are estimates)

We're not comparing:
100% vinegar
with
100% ketchup

I'm pretty certain that I could tell if something had 10% ketchup in it vs. none whatsoever.

Lexington style is good. Overall I prefer eastern but lexington is perfectly acceptable.
