I'm pescetarian but only eat fish once or twice a week. Here are a few of my fav dishes:

Quinoa salad with feta, sundried tomatoes, black olives, capers and lemon juice, served on a bed of spinach
Marinated portobella mushrooms
Grilled veggie wraps

Peppers stuffed with rice, beans, tomatoes and ricotta
Omelettes with a variety of fillings
Crepes with a variety of fillings
Eggplant parmesan

And Mediterranean/Middle Eastern cuisine is my fav to make and to eat. Fav dishes are sabich, tabbouleh, fattoush, baba ganouj, spanakopita and yemista.

i'm making chicken parm for my fam ton but i think i'm making myself eggplant. i eat meat, just not a lot of it. ALSO, thanks for posting the edamame burgers recipe. definitely going to try that.

Falafel Mmmmmmm!

The great thing about eggplant parm is that some meat eaters don't even realize they've been "deprived" meat since it's so hearty!

but seriously that is like my FAVORITE food. and i'm a total meat eater.

and allrecipes.com has a whole main dish section for vegetarian recipes

Awesome. Some great ideas here people.

I am definitely going to try a few on iheartkisses' list as well as the eggplant parm, vegetable gumbo, and maybe even NRR's zuchini / squash pasta

A lot of international food is meatless. (+fish)

burritos, tacos, quesadillas, enchiladas, etc. with shrimp, fish, beans, corn, peppers, onions, tomatoes, cilantro, squash

sushi, stir-fry, egg/spring rolls, tempura with veggies, shrooms, tofu, shrimp, and hoisin, sesame oil, or black bean sauce

curries or stews of beans, grains, lentils, cabbage, greens, onions, etc. with flatbreads like injera, pitas, chapatis, or tortillas

pizzas, pastas, risottos, with fresh herbs, artichokes, eggplants, heirloom tomatoes, beans, olives, seafood, and cheeses

I think for a while I am going to try to make only recipes I've never made before. I have a crapton of bookmarked recipe ideas but I tend to stick with mostly ones I've tried or that aren't too crazy. Time to bring on the crazy.

It definitely makes things easier on me that she eats seafood. Had a fair amount of success with this "pescatarian" meal last night.

Shrimp Kabobs with Hawaiian marinade (Lawry's Hawaiian marinade + 2 cloves of chopped garlic, some cayenne pepper, a bit of cajun seasoning, and some black pepper) skewered with red & orange bell peppers and fresh pineapple chunks.

Stuffed baby portabella mushrooms - pretty much winged this and drew from a few different recipes, but it turned out pretty damn well. Here's how I made the stuffing, approximately

1 16 oz container of ricotta
Generous amount of garlic powder
~1/3 cup parsley
Fresh ground black pepper
~5 finely chopped sundried tomatoes
~3 tbsps red pepper flakes
~1/2 cup Mozzarella, with some sprinkled on top half way through baking
A pinch or two of salt

Removed stems, spooned in filling, and baked on oiled baking sheet for ~25 minutes. I'll likely tweak my method to include a little more Mozzarella and slightly less ricotta, but i was pleased with the results. Served the kabobs with rice and was a solid meal.

Sounds delicious.
But, I would've added a tiny of bread crumbs to that filling. (to soak up liquids and provide a little structure)

(hint: you can make bread crumbs on the fly the old fashioned way -- with crumbled toast.)

I also eat mostly vegetarian (seafood is great and I eat chicken/pork/beef/bunny once or twice a month).

I love to make fancy sandwiches with homemade basil mayo, a runny-yolk egg, lots and lots of kale/mustard greens, raw garlic and whatever seasonal veggies are out. It's simple, fast, and full of nutrients.

I can't say enough good things about using kale. It's hearty and leafy--try making a normal salad but replacing the lettuce with those sturdier greens like kale and spinach. And if you really want to seem like you know what fuck is, make your own vinaigrettes. It's super easy. I like to make a peach/soy vin and then have slices of peach on a dense salad.

My boyfriend also makes a sweet-potato gnocchi in butter. Yum!

There's lots of stuff to eat without going into meat replacement products but I also really like meat replacement products. The trap is thinking of them as "fake meat" and not their own thing.

Ooh! Zucchini grilled and stuffed with more veggies and bread crumbs and shrimp and herbs... delish.
