pigs ingest the parasite from eating "slop" slop consists of leftover table scraps among other things.

the parasite is also ingested when pigs "root" and eat off of the ground.

commercial pigs are fed a pelletized meal passed through a steam extruder and then baked to dry the pellets out.

this is why you dont have to cook commercial pork to damn death in order to be safe.

nc state offers several degree programs geared towards raising, processing and generally providing safe muscle food products



the more you know

now, having taken a food science class on muscle foods and eggs........i cook the shit out of ground beef because o157h7 i no fucking joke.........

o157 is a surface bacteria
its easily killed when you sear a steak

but ground beef is a collection of many many surfaces stirred up and chopped and mixed in on itself

yeah any ground meat product should be cooked well done because of that.

I understand that cooking pork to death is not necessary or tasty... however the idea of rare pork just isn't appetizing to me. perhaps it's lack of experience eating it... maybe it is a mental block from picturing trichinosis, but i enjoy medium-well to well done pork.

when i make bbq i often cook the hell out of it because it breaks down the connective tissue and it is so easy to pull/chop.
