well, it could be a reason some organs are "inherently" disgusting. because some of them typically smell like fecal material even after washing billions of times. 5/18/2011 4:58:56 PM

haha well hopefully you're buying tripe that has been thoroughly cleaned. I've never experienced an off smell when cooking tripe, but I also don't buy green tripe. 5/18/2011 8:19:39 PM

^ This. I've definitely had good, not smelly tripe before. One case where green =/= go
Only offal I've never messed with/tried is intestine, and mostly for the poop reasons stated above. Though I have friends and family that have had it with good results. 5/19/2011 8:02:50 AM

If you like tripe I think you would like intestines. Personally I can only do the upper intestines. I've had one or two times with lower intestines that were not good. One of my favorite dishes that uses cow intestines is this:
 It's the intestines, flank steak, tendon, cabbage, bean sprouts, garlic, scallions, etc cooked in a Korean-style spicy garlic sauce. 5/19/2011 8:13:28 AM

i have seen tripe on every shopping trip since i can remember going to grocery stores decades ago.
have never bought or tasted it.
