I usually do coffee on a first date

maybe I'm missing something, but it seems to work fine, as a rule

Just drinks is the way to go. Drinks or tapas. A full meal is too much for a first date. Pick a place that's quiet enough for conversation, but lively enough so it's not awkward.

Also, my favorite first dates have been ones where I've met a guy for a jog or tennis. Exercise seems to have a similar effect of alcohol... meaning, it gets people to loosen up a bit. With jogging, you talk while you're jogging and can typically stop somewhere after for water/tea and conversation. With tennis, you hit, banter and then enjoy a nice conversation. I've also had tennis/jogging/hiking dates where you pack a little mini-picnic with micro-brews and vino to enjoy in the park after the workout.
