I'll have to check them out. Other than Super Wok, the closet I've had to authentic/traditional is some of the dim sum around the Triangle:

1000 Year Old Egg soup
Chicken Feet
Tripe
etc.

yeah pretty much everything on the menu of a Chinese restaurant in the US does not exist in China. Kung Pao chicken and Peking Duck were the only ones I ever recognized over there.

Authentic Chinese food = rice, eggplant, and kai lan. you're lucky to get much meat in anything, and often when you do it's the parts you don't want to eat (pig fat, pig snout, chicken feet/heads, fish with all the bones, eyes, head, tails, etc.).

It was funny when our group would go to a place that the program paid for and they'd come out with all these plates on a lazy susan and most of it looked disgusting and there would only be one or two dishes out of a dozen that looked edible and when it that good dish spun over to you every single person basically had to weigh out whether they wanted to eat something besides rice and vegetables, or be the dick that takes more than their share of the good stuff.

I've worked at Dim Sum house on airport blvd and Peking Garden in north Raleigh. Both are good.

This is Biden's choice in Beijing. The restaurant is only 10 mins drive from my home. He refused to choose pig stomach however.

Chinese people like watery dishes. There's even dish like this:


That's why Peking Duck is popular outside China. It looks like taco wraps.

when it comes to "Authentic" dishes, to me that means "Food I can't get without a passport"

And I want me some of those fucking steamed pork dumplings they sell out of carts in hong kong.

I think its the other way around. Authentic means its some maybe 2nd/3rd generation people who opened a restaurant. Traditional means its FOB or people who probably couldn't make a hot dog.

Dim sum house has a new owner and chef, it is now horrible. I was really really sad when I went there middle of December and found out and the meal was terrible.

My current spot is captain J's on capital. Their xiao long bao are delicious
