I tried this http://www.thekitchn.com/how-to-make-homemade-mozzarella-cooking-lessons-from-the-kitchn-174355 last weekend.
It turned out great! Anything where I can make a mess is extra fun for me

fresh mozz is too $$$ to consume melted in a large dish like lasagna, but its great by itself or as an app with tomatoes, basil, cured meat, etc. i suspect that the majority of sales are for recipes and that may help to explain the small market share. 5/20/2013 10:45:34 PM

i make a large pan of lasagna with fresh mozz for about 40 bux. That sounds expensive but its about 10 servings the size you would get in a restaurant which makes it 4 dollars per "order" 5/21/2013 12:06:22 AM

Something tells me The E Man eats at The Olive Garden for their all you can have salads with fresh parmesan cheese and their mozzarella cheese.
Also, it isn't fresh unless the vegetables/fruit were grown at the restaurant and the meat slaughtered and butchered on the same day.

A large pan of lasagna (assuming largest size pan for an oven) would be 4-5 dinners tops for someone with an appetite (like me ).
Anyway i never buy it because its too costly given my gluttonous tendencies. 5/21/2013 10:46:18 AM

I almost always use whole milk when I make mozzarella. I've both used less-pasteurized milk from the farmers market and also store brand and both are great. 5/21/2013 1:31:04 PM

Even if you double up ( like i do as well). Its still 8 dollars per meal which isn't bad considering. 5/21/2013 8:56:03 PM

i think for that you would need to buy your own seeds, grow your own grass/rye/millet, buy your own calves, let them pasture on your own fields, then get their milk and make the cheese.
that's truly "everything from scratch" 5/22/2013 4:42:26 AM
