NC pitmasters take on the 'Chopped' kitchen for barbecue glory and state pride

https://www.newsobserver.com/living/article215646125.html

Quote :
"Pitmasters from North Carolina, Texas, Memphis and Kansas City will compete in the famous Chopped kitchen under the typical format of making a composed dish of surprise ingredients in a specific time frame...

The North Carolina episode, filmed earlier this year, airs Tuesday, Aug. 7, with the winner returning Aug. 28 to take on the winners of Memphis, Texas and Kansas City..."

Here's the thing that kills me. You'll see a bunch of neckbeards on TWW smashing their keyboards to tell you as quickly as possible how much better Eastern BBQ is. It's all about where you grow up. I don't know anybody that grew up in Western NC that likes Eastern better, and vice versa. Not only that but Eastern style BBQ is soggy garbage that tastes like a steaming pile of dog shit. Western style is where it's at, so most people from Eastern NC are completely wrong.

What are the best Eastern BBQ restaurants, and where are they? I'm sure this has been listed on here but this website could die any moment without some engagement.

If ENC style tastes like a steaming pile of dog shit then WNC style tastes 95% like a steaming pile of dog shit.

I pretty much enjoy most forms of BBQ, as long as it's seasoned and cooked correctly.

Austin and Texas in general have excellent beef brisket. This isn't up for debate.

I like St Louis/Memphis DRY rub. Burnt ends are fantastic.

I like eastern NC BBQ as long as it's not too dry or too wet. Good eastern pulled pork has a soft texture and proper balance of vinegar and chili flakes where they blend together. I like western about the same overall, but as long as it's not too sweet. Course chopped is my go-to and I like the slaw as well.

SC BBQ is alright, but if it just tastes like yellow mustard, no thanks.

California tri-tip is vastly underrated and since the BBQ out here is generally crap, I grilled it up myself pretty frequently and use the juices and some red wine to make a gravy

using your same idiotic logic, brisket is also 'just a steak'. Furthermore, let's just call NC BBQ what it really is: pulled pork.

Quote :
"The original use of buried cooking in barbecue pits in North America was done by the Native Americans for thousands of years, including by the tribes of California. In the late 18th and early 19th centuries eras, when the territory became Spanish Las Californias and then Mexican Alta California, the Missions and ranchos of California had large cattle herds for hides and tallow use and export. At the end of the culling and leather tanning season large pit barbecues cooked the remaining meat. In the early days of California statehood after 1850 the Californios continued the outdoor cooking tradition for fiestas.

In California a well-known barbecue dish is grilled tri-tip beef rump, sometimes cut into steaks. The Santa Maria Style BBQ, originally from the Central Coast of California, uses a portable 'towed' trailer version frequently seen at farmers markets.[19]

The old Mexican Ranchos of California would cook tri-tip over a pit of red oak, and simply season it with salt and garlic to enhance the flavor. It was served with pinqinto beans, pico de gallo and tortillas."

FWIW, I never said tri-tip wasn't steak. But you should really look up the definition of BBQ if you're unclear: it has a lot to do with the methods and techniques used to cook the flesh of a dead animal

^^I mean this is a troll thread anyway, but if he's trying to have a 'know-it-off' with me about BBQ, he should at least know that tri-tip is considered "BBQ" by plenty of people, whether he personally thinks so or not. Nobody outside NC really gives a shit about eastern/western "pulled pork," but I grew up eating it and enjoy it. And yeah, I know a lot more about wine than either of you, but if you called a glass of sparkling wine "champagne", I wouldn't be a pedantic loser and quibble with you over it. Because that's pathetic, even for TWW.

^ can YOU not read or at least Google: tri-tip bbq? Just scroll through the first few hits.

Read the article I posted and the interview it contains. It's a REGIONAL variety of BBQ (you're not going to find good tri-tip outside of CA or maybe Vegas). You know, since NRR fancies himself as an expert for trying REGIONAL varieties. All of them.

Hamburgers and hot dogs are not the same thing as tri-tip, either. Stop being stupid.

It's OK to admit when you are wrong about something. It's embarrassing when you're wrong while trying to "correct" others, but owning up to it is the best option. That's why pencils have erasers, and God gave us the edit function in TWW.

I don't think anyone in their right mind gives a shit what some Oakland magazine defines as BBQ, when you already proudly quoted a damn wikipedia page giving credit to some Santa Maria tourism page that claimed that Santa Fucking Maria was known nationwide as the Barbecue Capital of the World.

Clearly that was a misprint. That title goes to my sister's former hometown of Lexington, NC even though nobody outside of western NC knows where the fuck it is.

Since you're too lazy to read:

Quote :
"PK: Is tri-tip just a California thing?

DF: Tri-tip is a cut that was popularized in Northern California. You will find it in Southern California, but God help you if you are in Chicago and you are asking for tri-tip. It is considered to be a regional meat. It’s largely unknown in the rest of the country.

PK: Is tri-tip the one thing California has contributed to barbecue in America?

DF: Unquestionably.

PK: You are in the world of competitive barbecue world. Do they care about the origins tri-tip?

DF: They don’t know about it, and, do they care about it? No.

PK: This ranch is Dublin is very well the birthplace of California’s contribution to barbecue, but nobody cares?

DF: Nope. And it’s often a side category in professional barbecue contests. It’s actually really popular in backyard contests. What I mean by backyard is an amateur contest where there’s guys that just want to cook or they’re trying to become professionals. Those contests are not overnight contests. The backyard contests will very often cook tri-tip, ribs, and chicken. You can do that in a matter of hours. For a professional contest, because you’re talking about pork butt and brisket; you’re having to go overnight. You’re talking about a six- to 12-hour meat.

PK: How did you become a competitive barbecuer?

DF: I judged in Kansas City at the American Royal in 2010
and saw my friends after the first day of competition complaining about how bad their cook went and said, “I know I just finished eating a ton of really great food, but it would be better to be on the other side complaining about my cook than having eaten the food.” It’s not really the same level of accomplishment."

Wow, this also came up:

https://barbecuebible.com/2014/06/13/12-things-know-tri-tip/

I mean it actually spells BBQ correctly (with a 'c') and it also has the word bible in the URL.

Holy shit. My initial post was me listing all the types of BBQ I like. I even said the "BBQ" in CA sucks (seriously it's all terrible, aside from tri-tip), but at least we have tri-tip, so it kinda makes up for it.

I'm sorry you are wrong and that tri-tip is a form of BBQ that you can't eat because it's not readily available in a state across the country. It must really hurt your heart.

And if you go around "correcting" people at a social gathering where grilled/smoked eats are prepared on a grill (commonly called a "BBQ" in many places) or in a smoker, you're a tool.

It fucking originated in CA- at least the version that is BBQed and the kind that I've been referencing

Look man, I can buy you some tri-tip, but if you're going to be a little bitch about it, I'll just mail you the shit that's prepackaged like corned-beef. It's not like you'll know the difference anyway.

No shit! They're also seasoned and cooked differently in a variety of preparations. Next thing you'll tell me that pulled pork is BBQ because it is, while BBQ pork ribs don't count because...to you they don't.

You can absolutely "BBQ" tri-tip. It's pretty quick and easy on the grill, but smoked tri-tip is amazing. Maybe you should try it sometime since you like brisket. I actually enjoy it best when it's sous-vide for 8-12 hours, but that's another conversation.
