Do any of y'all also have a pretty big difference in the time duration from start to finish between literature and garbage like spy thrillers or fantasy?

Oh, yeah, a densely written book can be much slower reading than, for example, a Stephen King novel. Usually it's other things that get in the way for me, though: I took a long time to finish my last book because I had tests to grade right after I started reading it and didn't have much time to read for a while.
