i just couldnt get it cool enough quick enough

yeah yesterday


first time i've used yeast strains from white labs, and the optimal wort temp is 70-75 for the kolsch ale yeast.

i couldnt get it to drop from boiling to that in a time frame that i'd consider optimal so i pitched at ~83.. just got impatient

after doing some research, i really should have waited the few more minutes.

but, it's got a steady bubble through the fermentation lock now, so hopefully all is well

it's an intense batch that im kinda excited about but i'd have hate to have ruined it by fucking up the pitch
