Being that I did this in culinary school ALL the freaking time...it's not that hard (for me).

Like you start at the end of a leg or whatever and start cutting the chicken away from the bone, and push it down as you go (you don't slice into the chicken), like pushing down slouch socks or something until you've cut it all the way away. Then you just stuff it so it's back in the shape of the cut of meat and cook it.

I was about to say, usually you leave the "wingie" part and just cut the bone out of the other two jointed parts so it looks "real"
