This is the key to good pho broth ( below). I also added beef shortribs. The entire thing cooked for 2 hrs, but if I had more time last night would go for 3 or even 4 hrs. I also used wider noodles, fresh not dried.

What components of the broth does that replace? I was going to try it from scratch with the beef bones and roasted ginger and toasting spices and whatnot.

Nothing really, we keep them around cause it's convenient. I would def. roast to bring out the flavor. Charing on a gas stove is what I do normally.

The ingredients on the container says, onion(powder), clove, ginger(powder), pepper ( didn't specify white or black but I think it's white-I would go with white if I were you.) I've never used ginger before, they can be strong and I didn't want it to overpower the broth. I wanted to keep it mellow. Plus I think the chared onion gives enough flavor.

I didn't know magic existed before meeting Peter. I think it's good for him to have a hobby and I support it, but I have absolutely no desire to learn how to play ever. I'm busy with school and work anyway, so he has plenty of free time to fill.
