Don't drink and bake, kids. I saw the last of my blood orange sangria in the fridge and started sipping on that in the middle of the day on Saturday, when I was also in the mood to bake and had several recipes planned out to make throughout the day. Aaron decided he wanted to try the cucumber drink I'd found on my friend's blog, so we made some of those.
52. Cucumber Fix: http://www.thefoodspot.com/2009/12/08/cucumber-fix/ — I go back and forth with gin. Sometimes I adore it, but other times I can hardly keep it down. We only had a bottle of pretty cheap gin in the house, so we used that, and they were still really good. I decided it was something that should be enjoyed on the front porch in mid-July, though. It tastes so much like summer.
That led to "OK these need another minute or two" ... 10 minutes pass ... "oops" a couple times throughout the day. That mostly happened to a repeat recipe, though. I made more Mexican chocolate cookies. I also apparently added a whole lot of cayenne to them this time. Less is more.
The rest of the stuff I baked: 53. Sweet Potato Blondies: http://www.6bittersweets.com/2009/11/month-of-vegan-cookies-sweet-potato.html — Still working on my 30-pound box of sweet potatoes, and I came across this recipe and wanted to try it. I am normally leery of vegan baked goods, but they turned out pretty good. I think. I took them all to the hash on Sunday and by the time I got back there was one left and someone else was about to eat it and I asked if I could take a pinch of it because I made them and hadn't tried them yet. It was good, but you can't tell too much from a pinch. I did use chocolate chips.
54. Peanut Butter Cheesecake Brownies: http://www.ericasweettooth.com/2011/02/peanut-butter-cheesecake-brownies.html — I told The5thsoth I would make him something when he came to visit, and I had to make up for my totally non-swirled red velvet cheesecake brownies. I skimped on the cocoa powder a little because an entire cup plus melted chocolate seemed overkill. I believe these cooked a bit too long, but the half of one I ate was tasty.
55.Chocolate Chip Cookie Dough Truffles: http://www.thegalleygourmet.net/2011/02/chocolate-chip-cookie-dough-truffles.html — I was tempted to just make my normal chocolate chip cookie dough, but figured since I was making them for other people I'd use the recipe as written that leaves eggs out. They are mostly butter, and taste that way a little lot too much for me. Would be better IMO if they had a little more flour. I think if I did this again I'd just make normal cookie dough, because I don't really give a fuck about eating a little bit of raw egg, and nobody else has to know. Other people seemed to really like them.
I also did a few things that weren't entirely butter, sugar and flour. 56. Kale & Eggs: http://edibleperspective.com/2010/06/bullet-point-madness/ — Really easy. I tossed on a tiny bit of shredded Swiss. I thoroughly enjoyed it, but I am weird. I am honestly not sure how the people I fed it to felt about it.
57. Garlic Salted Quinoa with Savory Red Beans and Rainbow Chard: http://edibleperspective.com/2010/02/prettiest-veggie-ever/ — I have been wanting to try rainbow chard. I am jealous of this girl's though because mine was only red and white, no yellow or hot hot pink. Following her directions was not so pleasant because they are spastic. We were out of sage for the beans, for which I was very sad. I didn't do a steamer basket for the chard and just steamed it in a little water in a pan. I'm not sure cooking the stems separately was worth it. I did find out that I really like chard though. I enjoyed this, but probably wouldn't worry about coordinating the three separate foods in the future.
58. Puttanesca-ish Egg Salad — Came from the NYT salads list. I posted what the article said exactly in the egg salad thread, but basically eggs, mayo, a little garlic, chopped tomato, red onion, capers, black olives and optional anchovy paste. I did not use anchovy paste and just used a wee bit of mayo and the rest Greek yogurt. I really like the garlicky note in egg salad. 2/22/2011 4:33:29 PM |

I made bruschetta tonight since I had some stale wheat bread and some tomatoes that were about ready to go.
Amazing cannot even begin to describe this. My boyfriend and I gobbled it up which makes me wish I made more.
2 pieces Stale bread/Italian bread (I had a stale loaf of whole wheat bread) Olive oil 1/2 cup Tomatoes (I used cherry) chopped 1/2 cup Red onion chopped 1/2 garlic clove chopped 1/2 cup chopped pinto beans (they were leftover from a chili recipe) A few leaves chopped basil (or dry shake basil - 1 teaspoon) 1/4 teaspoon salt Balsamic vinegarette Shredded parmesean cheese (optional)
Cut bread into squares and place in baking sheet (spray beforehand). Drizzle olive oil over bread. Preheat oven to 350 degrees and place sheet into oven to warm up bread while oven preheats.
Chop onion, tomatoes, beans, basil and place in bowl. Add 1 teaspoon olive oil and salt to mixture and blend well. Take bread out when oven is pre-heated and scoop mixture over bread. Place back in oven for 6-8 minutes. Take out of oven and drizzle balsamic vinegarette (I love HT Traders balsamic glaze because it's thicker). Optional: lightly throw shredded parmesan cheese over bruschetta. Serve. 2/22/2011 8:03:02 PM |

Made chunky chickpea and herb dumpling soup last night.
Recipe: 1 tbsp oil 1 onion, chopped 2 cloves garlic, crushed 2 tsp ground cumin 1 tsp ground coriander ¼ tsp chili powder 2 (10 oz) cans chickpeas 3 ½ cup vegetable stock 2 x cans chopped tomatoes 1 tbsp chopped fresh coriander leaves 1 cup self-rising flour 25 g (3/4 oz) butter 2 tbsp grated Parmesan 2 tbsp mixed chopped fresh herbs (chives, parsley, coriander) 3 tbsp milk
1.Heat oil in large saucepan. Cook onion over medium heat for 2 to 3 minutes or until soft. 2.Add garlic, cumin, ground coriander, and chili. Cook for 1 minute or until fragrant. 3.Add chickpeas, stock, and tomato 4.Bring to a boil, then reduce heat and simmer, covered, for 10 minutes. Stir in the coriander 5.Make the dumplings as follows: a.Sift flour into a bowl and add chopped butter. b.Rub together with fingertips until the mixture resembles fine breadcrumbs c.Stir in the cheese and herbs. d.Make a well in center of mixture and pour in the milk. e.Mix milk in with a flat-blade knife until just combined. f.Bring together into a rough ball (also fun) and roll into small balls 6.Add dumplings to soup. ^2 I wasn't being defensive, but I do know how judgmental you are.... and that you make baked goods and try to be "healthy" at the same time, all the time. There is nothing wrong with having something like cake batter pancakes every now and then, and not worrying about what they're made of. Quit riding nuts over a sweets recipe that doesn't include veggies.

Trying to decide what to make tomorrow. I want to use some random crap out of my fridge. I have: 3 yellow squash, about 14 oz. of whole stewed tomatoes, ~2 cups tomato sauce, a little mashed sweet potato and ~1.5 cups rehydrated mushrooms that were dehydrated. In the freezer I have one large chicken breast, one whole roaster chicken, a few kinds of fish (sole, whiting, flounder and tilapia), corn, field peas and snaps, and lots of homemade veggie and shrimp broths.
Any ideas on what to do? Of course I have a bunch of other stuff too but that is the stuff I'm trying to use up. 2/28/2011 9:13:33 PM |

cube the chicken breast and brown it. then make a shepard's pie type dish with all the veggies and the chicken and a little broth and top with the potatoes. bake 25-30 mins til it starts to brown a bit on top and everything is bubbly in the veggie layer. top with breadcrumbs or a bit of cheese before baking, or spring onions after.
i'm trying that cucumber fix now!

So I hear Harris Teeter is having an amazing sale on whole chickens, like $.59 a pound. Outrageous! I am intimidated to cook them that is why I have not bought a few yet. ^^ I would but I just had chicken pot pie (for the first time since I was like, 6) yesterday and that feels pretty similar. I am thinking paella with some of the fish, chicken and shrimp. We shall see.
Hope you like the drink. It's pretty delicious.
^ They are SO EASY in the crock pot. Just put the whole chicken in and rub it with some seasoning and turn it on. No broth or anything needed. That was the first recipe I did this year and it was so easy and good. I was pondering doing that again tomorrow but will probably save it till later. It seems like a non-yeast recipe would be OK if you like chewier or more thin-crust types of pizza, but not so much for normal, softer dough.

I didn't have fresh mushrooms so I used rehydrated dehydrated ones I had on hand. Not quite as good in terms of holding together, I think, but I still liked this a lot. And there is something really fun about mushing up meatloaf with your bare hands.
60. Parsley Garlic Chimichurri: http://www.asadoargentina.com/parsley-garlic-chimichurri-recipe/ — I wanted to use up some parsley because that shit comes in ginormous bunches. Note to self: Don't try to make this in a Magic Bullet again. It was meh. I put it on chicken while it was baking and served it with more on the side. Not bad, but not as much flavor as I was expecting.

Peanut Flour "Nutella": http://thehungryartist.wordpress.com/2010/11/10/experimenting-with-trader-joe%E2%80%99s-peanut-flour/ — My co-worker gave me some peanut flour, which she says she uses to make her peanut butter(ish stuff). The finished product has more protein and less fat than regular PB. I have nothing against fat at all and make strides to get enough of it rather than cut back, but I like the idea of being able to have a bigger serving of PB with more protein.
Apparently Trader Joe's doesn't carry it anymore so you have to order it online (or probably places like Whole Foods would have it, but I don't actually know). I am going to order some so I can play with it more, because it seems like it has potential. This didn't taste like Nutella at all but it was good on a banana.

at first i was like

i dont really have much to contribute to this thread by way of recipes but what ive been making has been pretty simple recently
night before last, gf wasn't feeling well, so made an oregano-y roasted tomater soup.. (beefsteak, halved and slow roasted with garlic, then simmered with caramelized onions, oregano, butter, chicken stock, blended (i'm in love with my immersion blender right now), strained, added cream.) needed something to cut the acidity... maybe next time might sprinkle crunchy bacon bits on top or something, idk. and wont make again until the tomatoes look a lot better... experimented with making formed parmesan tuiles.. then a sourdough/smoked gouda/tomato/avocado/arugula grilled cheese. last night bacon braised kale and some herbed pan fried orange roughy filets. for the kale, cut/cleaned/blanched then cripsed panchetta and onions, added the kale and chicken stock, covered, and let roll for a while.

64. Paella: http://vegweb.com/index.php?topic=8642.0 — The veggie recipe was the easiest to follow that I found so I used that as a base even though I did want to add meat. Instead of garbanzo beans I used a chicken breast and put some shrimp on our servings. Also used shrimp stock and no green beans. I love one-dish meals. This was easy to make and really good, and also makes a ton so there are plenty of leftovers. I served it with lemon wedges to squeeze on top because from my Googling that is apparently what you're supposed to do with paella.
Tonight's dinner took me a whopping 15 minutes start to finish: 65. Ricotta and Spinach Stuffed Portobellos: http://www.eatingwell.com/recipes/cheese_spinach_stuffed_portobellos.html — Instead of cooking these in the oven before stuffing them I microwaved for about 5 minutes. I halved the recipe and it seemed like there was a little too much ricotta filling and it would have been better with less. 66. Chili-Rubbed Tilapia: http://www.eatingwell.com/recipes/chili_rubbed_tilapia_with_asparagus_lemon.html — I was going to make the asparagus too but the store didn't have any. Nothing really astounding here, but if you like tilapia it's good, quick, easy and cheap. Plus a piece of bread with some of the sun-dried tomato butter I made a bit ago.

I made greek spinach rice last night...mehhh
Recipe:
2 pounds of fresh spinach 1/2 cup of olive oil 1 large onion, minced 5 stems of fresh dill, coarsely chopped (1 teaspoon dried) or 2 sprigs of fresh mint 2 tablespoons of tomato paste 1 cup of uncooked converted rice 2 1/2 cups of water sea salt freshly ground pepper 1 lemon, cut in wedges Preparation: Preheat a heavy-bottomed pot on low heat.
wash spinach, chop, and set aside to drain. When the pot is preheated, add the olive oil, increase the heat to medium, and sauté the onions until translucent. Add the dill (or mint) and spinach and sauté about 5 minutes until wilted. Dilute the tomato paste in the water and add to the pot with salt and pepper to taste. Increase heat and bring the mixture to a boil, add the rice, stir, and cover. Reduce heat and allow to simmer for 20 minutes or until the water has been absorbed.
