Just a thought, if anyone here is interested in getting in to knifemaking/ blacksmithing, all my tools, equipment, forge, etc. is up for sale. Also have a ton of nice woodworking stuff that needs to go. I have pretty much everything you would need to have a really nice setup. HT oven, bader 2x72 grinders, NC tool and forge propane forges (2), a super nice treadle hammer, coal forge that is portable, tons of all types of materials- blade steel, handle materials, etc.

i need kitchen knives that aren't shit. i don't want to spend $texas, but i'm willing to spend whatever it takes to get a decent knife that will hold an edge with proper maintenance and storage. chef's knife, utility knife, and paring knife would probably do. 6/2/2013 10:05:59 PM |

Please define your expectations for cost and maintenance. Investing in an Edge Pro Apex might be the better investment. 6/3/2013 11:39:13 AM |

i'll hit it with the honing rod before each use and keep it out of the dishwasher. i'll have it sharpened when it needs it.
how much do i need to spend? idk much about kitchen knives. my favorite hunting, skinning, and filet knives are Moras and they're not expensive at all. 6/4/2013 7:25:46 PM |

I have the Wusthof Classic knives and really like them. They aren't super expensive (not sure what you budget is). 6/5/2013 9:09:14 AM |

I have a full set of Wustof knives as well. My wife loves them. Around $150-200 for 6 steak knives and 5 or six larger knives 6/5/2013 9:40:59 AM |

I dropped one of my knives tip first on some hard tile this morning. The tip of the blade is squished now. At least it wasn't one of my expensive knives.
Anyone know someone good and sharpening and ding repair? In addition to having the blade tip fixed, I have some recurve blades that are beyond my sharpening knowledge. 9/17/2013 12:58:04 PM |

okay, i need some suggestions/advice about the must-have knife in a kitchen
the intarwebs has overwhelmed me and i so i will likely pose this same question on a more specific board...but i wanted to get y'all's opinions, too
i'd like to spend no more than $100, though feel free to suggest some that are a bit over that price range, as things like over-priced shuns go on sale regularly enough that a little patience might get me one for a more reasonable price
as for the style...i have no idea: chef's, santoku, gyuto, etc? japanese or german steel? it's for my wife and will be used primarily for cutting vegetables...i realize actually using the different styles is the best way to decide which is "best", but it seems to me that the only way to do that is to actually buy them all and i'm not prepared to do that
everyone has their opinion and it seems common for folks to call santoku a jack of all trades but the master of none, while the gyuto seems to be a cross between santoku and chef styles...of course, there are just as many people who swear by a style and brand
so...suggestions on a specific brand, style, model, size? if i had to buy one right now, i'm leaning toward the 240mm tojiro DP gyuto (which is VG-10 steel) for $80: http://www.amazon.com/Tojiro-DP-Gyutou-9-4-24cm/dp/B000UAQOUA/
thoughts?

This doesnt help much i'm sure, but I've got a nice set of Henckels that has the Santoku and gyuto styles, and my wife pretty much ONLY uses the Santoku. For everything. I prefer the gyuto, but I think since our Santoku is smaller, that's why she prefers it. 1/23/2014 9:56:39 AM |

i decided that good kitchen knives are way overpriced. i ended up just using my inexpensive Mora hunting knives in the kitchen. works great for me. 1/23/2014 1:34:44 PM |

Picked up a couple of fixed blades. No real reason, besides wanting them.

picked up the victorinox 3-piece set (10" chef, 8" slicer, 4" paring) for $64 after tax when they were on sale the other day: http://www.amazon.com/Victorinox-46892-Fibrox-3-Piece-Chefs/dp/B0000CF99O/
fantastic reviews...not as pretty as some, but they seem to be pretty great for the price
they're definitely a step above what i was using 4/16/2014 9:33:28 PM |

sorry, they just got here today and then i thought to post
i'm sure a similar deal will pop up again...i set up a deal alert on SD after reading up on the victorinox brand and deciding it was the hands-down kitchen knife bang for your buck...i'll keep it and post back if another deal comes to my attention
on a related note, a 10" chef knife is BIG...the one i was using is 8" and i thought 10" wouldn't be too bad, but damn
the 7" santoku has gone on sale for as low as $25, so that will be my next purchase: http://www.amazon.com/Victorinox-Granton-Santoku-41529-6-78523-17/dp/B008M5U1WM/

Got these to be key-ring knives. would have been nice if they actually had key-ring holes

How does one go about using the built-in kitchen knife sharpener that's in the holder? Google and YouTube were of little help. 7/8/2014 8:26:15 PM |

i am interested in a new EDC knife. I currently carry a Buck Redpoint, which has surprisingly been a great knife over the many years, or a Leatherman Skele-tool.
I'd like something that is somewhat thin and light weight, under $100 preferably, with a sharp blade that will hold it's edge without needing constant sharpening. 6/6/2016 9:24:14 AM |

I have a Spyderco Dragonfly 2 which I love. It is incredibly lightweight and cuts well. I have the "cheaper" steel and it ran me about $50-55. There is a version with a "better" steel for the blade that is about $75. The one I have is just fine but I've only had it about a year so I can't say much on the durability yet. 6/6/2016 12:49:55 PM |
