You mix ricotta cheese, green diced chiles, and some shredded cheese (Mexi style) then spread that mixture onto 8 cooked lasagna noodles. Then you put a layer of black beans (drained) on top of that and roll them up, jellyroll style. You put them seam-side-down on a baking dish and pour some salsa on top, bake for like 30 min around 350 then garnish with cilantro sprigs 1/3/2010 7:23:36 PM

Quote : | "Black Bean Lasagna Rolls
Ingredients 1 cup (4 oz) shredded reduced-fat Monterey Jack cheese 1 (15 oz) carton part-skim ricotta cheese 1 (4 ½ oz) can chopped green chilies, drained 1/2 tsp chili powder 1/8 tsp salt 8 lasagna noodles, uncooked 2 cup canned drained no-salt-added black beans nonstick vegetable spray 1 (15 ½ oz) jar no-salt-added salsa fresh cilantro sprigs (optional)
Directions Combine first 5 ingredients, stirring well. Cook lasagna noodles according to package directions, omitting salt and fat; drain well. Spread cheese mixture over one side of each noodle. Spoon black beans evenly over cheese mixture. Roll up noodles, jellyroll fashion, beginning at narrow ends. Place lasagna rolls, seam sides down, in an 11 x 7 x 1 ½-inch baking dish coated with cooking spray. Pour salsa over rolls. Cover and bake at 350° F for 25 minutes or until thoroughly heated. Garnish with cilantro sprigs, if desired.
Makes 8 servings. Per Serving: 2 ½ Starch, 2 Meat, 2 Free." |
I don't think I could link the recipe without you having to register for something ... it was on Jenny Craig (but I mean, it's free, and they have a lot of good recipes you can find on there) 1/3/2010 7:29:02 PM

Check out this recipe for chicken tikka masala:
http://allrecipes.com/Recipe/Chicken-Tikka-Masala/Detail.aspx
I use the store-bought curry paste to marinate the chicken. Its in the oriental section of HT.
Also, I substitute condensed milk instead of the heavy cream.. cuts down on the fat and condensed milk keeps for a lot longer. 1/3/2010 9:59:48 PM

ooh, i could use that too. i kind of want a veggie smorgasboard (sp?) so i'm thinking cabbage leaves and eggplant slices would work well for the "noodles". i guess i really don't need a recipe. 1/4/2010 9:57:49 AM

im really not sure about using cabbage leaves for noodles
seems like it'd be hard for it not to get slimy and just a terrible texture 1/4/2010 10:01:03 AM
|
thumper All American 21574 Posts user info edit post |
eh, the only reason i suggest cabbage leaves is because years ago, a coworker of mine (who is no longer with the company) went low carb for awhile and his wife made him cabbage lasagna once a week and he raved about it. so i figured it could be done. perhaps only half cooking the cabbage? who knows. 1/4/2010 10:02:57 AM
