haha yeah, i didn't see that chicken enchilada soup before i posted. i might have to do that with boneless chicken!

CROCK POT CHICKEN CACCIATORE
3-4 lbs. boneless/skinless thighs and breasts 1 large onion, thinly sliced 2 large red or green bell peppers, sliced 3 cloves garlic, crushed 1/2 teaspoon each basil and oregano 1 (6 oz.) can tomato paste fresh mushrooms, sliced 2 bay leaves 1 (8 oz.) can stewed tomatoes with chiles salt and pepper to taste 2 cups burgundy wine Parmesan cheese, for sprinkling before serving
Place sliced onions on bottom of crock pot. Add chicken. Stir together remaining ingredients and pour over chicken.
Cook on low 7-9 hours or high 3-4 hours. Serve over pasta, with a salad on the side.

Burgundy refers to a region of France. Stick with either Pinot Noir or Chardonnay. Those are the most common. With chicken, I'd think you'd want a white wine, like Chardonnay.
Also, this sounds so unhealthy but SOOOO delish:
CROCK POT CHICKEN & BISCUITS
2 skinless, boneless chicken breasts 3/4 c. all-purpose flour 3/4 c. uncooked oatmeal 2 tsp. baking powder 1/4 c. oil 1/2 c. skim milk 1 egg white 8 oz. frozen peas 1 lg. carrot, shredded 2 c. cold water 1/4 c. all-purpose flour 1 tbsp. dry minced onion 1 tsp. poultry seasoning 2 tsp. chicken bouillon
Cube chicken and brown, using cooking oil spray. While chicken is cooking, mix 3/4 cup flour, oatmeal, baking powder, oil, milk and egg white together (will make a wet biscuit dough). In oiled crock pot, mix cooked chicken, peas and carrot. Reusing pan, heat 1 1/2 cups water, onion, poultry seasoning and bouillon on medium heat. Mix 1/2 cup cold water and 1/4 cup flour together to make a white sauce.
Gradually pour white sauce into water-bouillon mixture, stirring constantly. Continue stirring until mixture forms gravy. Pour gravy over chicken, peas, carrot mixture and slightly stir. Drop biscuit dough in 1/4 cupfuls onto top of crock pot mixture. Cover and leave 1/4 inch vent (so steam can escape). Cook on high 4 to 5 hours, until biscuits are slightly brown.
NOTE: DON'T cook this on low, or the biscuits will not brown. Serves 4. This dish can also be done in the oven. Use a casserole dish and bake 40 minutes at 425 degrees. 10/19/2009 9:47:16 AM |

Orange Salmon
2 sliced vidalia onions 2 sliced red peppers 4 small salmon filets 1/2 tablespoon orange zest 1 teaspoon rosemary 1 teaspoon crushed bay leaves Salt and pepper 1/2 cup orange juice 1/4 cup soy sauce

ok so the whole "delishus" thing was a bit too soon to call. i made the chicken cacciatore last night (recipe top of page) and as i kinda suspected, the chicken breast (all white meat of course) was very dry. and there was more wine than tomatoes, so there was no real "sauce" to put over the noodles with the chicken. it was basically just a thin liquid left in the crock pot, with good flavor, but not a real sauce. the flavor in the peppers and onions was delicious though.
so if you're gonna do that recipe up there, definitely use some (if not all) dark meat chicken pieces. also, i recommend you use less wine and more stewed tomatoes, so it'll have more of a "sauce" to it. that way you've got something to put over noodles!] 10/21/2009 9:31:11 AM |

Dark meat chicken won't get as dry as white meat, so that's an option. If you prefer to use white meat chicken, here are a few options to retain moisture...
...cook in a fattier liquid, like a cream sauce or a sauce with a lot of butter/olive oil ...keep the chicken on the bone ...don't remove the skin ...cook for less time ...or try wrapping the chicken pieces in aluminum foil inside the slow cooker
White meat pieces of poultry don't have a lot of fat and connective tissue compared to dark meat pieces like thighs, legs, etc. The fat and connective tissues break down and baste/moisturize the meat while it's cooking, keeping it more moist (especially with any long, slow cooking method). When white meat is cooked for a long time (past “done”), the moisture continues to be drawn out of it, which tightens the meat so it tastes dry and harder. 10/21/2009 9:46:12 AM |

i don't know how big my baby crockpot is but it came with my big crockpot. i assume it is for making side dishes and like dips for parties and stuff. at least that is what i use it for.
though i suppose you could use it to cook things on a small scale just for one? i've never used it for that though cause usually when you cook in a crockpot the goal (at least for me) is leftovers. but it is cool to have for like tailgates and stuff.

1 - pork shoulder (~3.5 lbs) ~4tbsp - dry rub pork seasoning (i used McKormicks' but will probably make my own next time) ~1/4 bottle liquid smoke
coat the meat with the dry rub, add the liquid smoke, and cook on low overnight. its almost as good as real bbq. the only thing is it comes out a little too moist, and no charred/crispy edges.
i tried this last night. i was inspired by a guy i heard on Lynn Rosetto Kasper's Splendid Table this weekend

Pumpkin Turkey Chili 1 cup chopped onion 3 cloves of garlic, minced 2 medium sized peppers, diced (I like to use 1 red and 1 green) 1 lb ground turkey 1 tbsp chili powder 2 tsp cumin 1 tsp cinnamon 1 tsp Mexican oregano 1 small can diced green chili peppers 15oz can black beans, drained and rinsed 1/2 cup frozen corn kernels 28 oz can crushed tomatoes 14 oz can diced tomatoes 15 oz can pumpkin puree, or 2 cups homemade Spray a large pot with nonstick cooking spray and place over medium heat. Add the onions and cook for about 5 minutes, until just softened. Add the garlic and bell peppers, and cook about 5 minutes more until tender. Add the ground turkey and cook until browned, breaking it up with a wooden spoon. Season with salt, pepper, chili powder, cumin, cinnamon, and oregano. Stir in remaining ingredients, bring to a boil, then reduce heat and simmer for 20-30 minutes to blend flavors. Or, just brown the turkey with the seasonings and combine with remaining ingredients in a crockpot and cook on low for 6-8 hours. Serve with your favorite chili toppings - cilantro, green onion, cheese, sour cream, etc. Makes 4 very generous servings - perfect if you're not eating this with any cornbread or other sides.
