making the turkey breast for the week

then making dinner

this breast is taking longer than normal

the last few weeks on monday ive been getting a whole turkey breast side, making a dry rub, then searing and broiling it off... using this meat sliced up in sandwiches instead of purchasing deli meat

less preservatives, and sodium, tastes better too..

also, about half the price.

for dinner i've got a whole seabass im going to grill with fennel, and stuffed with fennel seeds, lemon, and garlic.

yeah you can get a like 2 lb breast for like $7-8.

for today's rub, i just combined 2tbspn paprika, 2tbspn garlic powder, 1tbspn kosher salt, a touch of celery salt, 1 tbspn thyme leaves, fresh cracked black pepper

coated both sides, got a grill pan smokin hot, put olive oil on a paper towel, gave the pan a coating, seared both sides for like, idk. 3 min/side

coated both sides again, put in a baking dish under the broiler covered in a foil tent, and flip after like 15 minutes, after the 2nd 15 minutes, take the cover off, (skin side up) and let the broiler brown it off

after it's cooked through (time varies), ill let it sit for a good while

i usually slice off after it's come to close to room temperature.
