you actually could make those for your guests. you just need to buy gluten-free flour - which is expensive but could be worth it if you really want to make the appetizer. they sell gluten-free flour at all the grocery stores now. Red Mill is the brand i use.

give me your enchilada recipes right now! i like mine with cheeeeeese (and other stuff is fine, too)
i especially like ones that use the white cheese mexican restaurants do (instead of other cheeses)
i also especially like brown sauce but will consider green!
i have heard good things about trader joe's enchilada sauce and might try it out tonight. yum.
OR i might just go the easy route and do tacos, cheese dip, guac salad, rice.

I made FABULOUS burritos the other day by sauteing some sweet potato chunks and onions, then adding black beans, an avocado, and corn. agreed, potatoes are the BOMB in mexican food
i made delicious burritos a few weeks ago. well the chicken was the main delicious thing because i marinated it in lime juice and a mexican spice blend. cut it up and then marinated it. it was so moist and delicious and limey/spicy. mmm.

^My friend has a really good one... I'll try and get the name of it. She made a peach pie out of it this summer and I thought I was going to die it was so good.
Dinner tonight is coconut rice and veggies in spicy peanut sauce. Nothing fancy but I'm proud that I had everything on hand to make this except some tofu and even that was optional.
Yay for having lots of ingredients in my house that don't go bad and a rotating selection of seasonal produce!

This weekend I cooked chicken marsala, except I substituted madeira wine instead. When I first made this, I accidentally picked that wine up instead of the marsala and thought it was really good. I then proceeded to use the correct wine and it didn't taste as well.
I also made a blueberry cheesecake pie for dessert. I used this one recipe and its by far the easiest and best tasting recipe. I got the blueberries fo free from work; otherwise, they were God-awful expensive at the grocery store. 4/10/2011 6:30:50 PM |

cannellini bean cakes are just bean cakes. like black bean cakes (prob the most common). cannellini is just a white bean. you can use whatever kind of bean you want to make a bean cake.
you can put other stuff in there too...fish, crab, rice. i mean anything, really. or just leave them as beans...beans with any spices you want, you can add bread crumbs, polenta, grains, or not (but ya kinda need something to make them stick together). they're pretty simple to make and i think they taste good. esp with different sauces and stuff. *shrug*
anyways my new favorite veggie is: ENDIVE. i mean i've always liked it but never really done a lot with it myself. i've just eaten it if it has come with something from a restaurant. but i am just now discovering how it pretty much goes with everything. it makes great salads. you can char it and it is delicious. the leaves are great for dips and stuff (and healthier than chips). kind of an amazing little veggie. so also give me your ENDIVE recipes while we're at it
but seriously. it is perfect for just about any kind of basic salad. and so crunchy. omnomnom

I don't know what you mean by "fancy" but http://www.allrecipes.com has an ingredient search where you can put in what you have and also list things you don't want included or keywords and it'll show you what you can make.
